May I ask if vietnamese is your native language? You do a lot of stuff that seems very normal to me as an english speaker and I wanted to know if that's because you are also english speaker first or if vietnamese just happen to do that stuff too.

Craig, that's a shrimp sauce to add even more flavor to the dish. You'll find it at your local Vietnamese market and its brand is often Thai brand/made in Thailand.
