There's supposed to be 4 different songs that play during Vs CPU matches, 2 alternating song between most opponents, a special song for the Totem Pole character, and 1 for Madame Luna/Dreg(Super Drunk), but MAME still has not fixed this issue other than Dreg having his music finally with more recent revisions, but the stage music is supposed to stop when you win a match, before restarting for the next opponent.
You're probably getting confused with the upgraded PS1 version. Because when i tried Puzzle Bobble 4 on the latest MAME version (0.262) the stage music don't stop whenever i beat a puzzle mode level or i win a match against the CPU. Also i don't think that is a MAME emulation issue, but a bug in the game that was fixed in the upgraded PS1 version of the game.

There's different methods the method I'm using is I got a Sega Genesis Mini and modded/hacked it with a program called Hackchi and I've added tons of arcade games like this plus, Genesis, NES, SNES, etc games. I play these games on my 60 inch HD TV using a regular controller it's pretty cool.
