Moist is definitely the word Quick tip add sour cream and lemon rind , the sour cream makes such a moist muffin and the lemon rind add such a great flavour that complements the blueberry.
I added Greek yogurt instead of sour cream because I always have it on hand but may have to try sour cream next time instead. And yes, lemon and blueberries is always a win! Thanks for your suggestions!

I use coconut oil in most of my baking and I bake a TON! I love the taste and I always add a dash of buttermilk....:))

I use both butter and oil in my muffin recipes. If I’m out of butter, I use butter extract. I just like the extra layer of flavor!!
