It is one of the best things abt one piece it says so much! Both about Zoro and Sanji

One thing you didn't mention is that Zoro said multiple times that if Luffy was weaker they would have to have a new captain. This demonstrates him being serious about the standards he holds Luffy up to. I don't remember exactly but I think one of those instances was when Luffy used his conqueror's haki on thousands of fish men and everyone was surprised except for Zoro who said if he wasn't that strong he wouldn't be captain (in a threatening undertone). Honorary mention for his focus was when he was the first person to go all out against the 2 Yonkos while the other 3 captains were stumped. Blocking the both yonkos attack and forcing them to dodge his attack.
Are you just trying to prove Luffy being stronger than Zoro? He is but Zoro is not that far from him. The conqueror haki in fishman in your case, proved something but got debunked in Wano, when Zoro unlocked Conqueror's and its advanced from within the same night. Zoro has better power progression than Luffy

So Oda basically changed Sanji and set a "short-term" goal of becoming a more capable member of the crew to protect the weak and loved ones. (Nami) And him rivaling the best man, (only second to Luffy in a sense) is the ideal setting. That would make a hell of a duo combo to deal with as an opposing team. Imagine a certain teammate of Michael Jordan rivaling him in a somewhat equal footing. That would be a nightmare of a duo to deal with as an opposing team.

But it's also a concept he didn't fully have constructed when he went to sea. When Usopp left the crew, it was largely because Luffy made a rare insight failure and tried to be a more stoic captain when his crewmate needed to know he wasn't alone. I still think it a big odd that Luffy wasn't made to apologize similarly, because he needed Sanji to step in to stop him from doing the same kind of emotional damage that Usopp was doing to him. Sanji and Zoro being both of his wings, one to keep his heart steady and the other for his hands. I forgot how they mocked him after they left Vivi at home, I didn't even notice Oda repeated the gag when they read the newspaper after Wano, that's fun.

Sometimes i wonder...as Vice-Captain, Zoro is technically THE captain. The one that really matters due to his focus and seriousness. Many times in the anime/manga itself Zoro was mistaken for a captain by other characters. And if you think about it, there is no "first mate" clarification because in the end of the day, Zoro is basically the more important part of our beloved captain Luffy that actually leads by example and sets a culture. Luffy is a dreamer, carefree, naive , charismatic and a go getter type of a character. Zoro is like his second half with his main traits being equally iron-willed, focus , serious, discipline and prideful. Its no wonder why even the Zoro-Sanji debate is a thing... Because its like comparing Sanji to Luffy in a way. Of course people would be quick to push Sanji fans back harsh regardless if they are not Zoro die hard fans themselves. Like mentioned in the video, "if Luffy gets injured in the play offs" then its pretty much a Zoro show. Sure Sanji is a second coming accountable member but Zoro is just better overall, as a character. Strength and status wise within the crew. Sanji is just following the inspiring example of Zoro being the better member among the rest. Making him and Zoro a deadly duo against any opposition. One of Luffy's biggest strengths is talent assessment, and picking members of the crew who make up for his weaknesses. Zoro's strength is his intelligence in being a leader. It's not a slight against Luffy at all I don't know how you're looking at it that way
