You can harvest rhubarb when the stems get maybe 1 1/2” thick and about 12-18+” long. In most of northern US you can harvest both in spring and in fall, just break off like removing celery stalks from the plant. Freezes beautifully, just chop up and toss into a bag and freeze. Cook from frozen with some liquid and enough sugar to make it tasty. Some lemon will perk up the flavor.
I can no longer do the gardening and canning that I did at your ages, but enjoy watching you do the hard work! I used to harvest wild rose hips and cactus pears to make jellies. I can imagine the aroma from your homemade sauces...your videos are that good!

So sorry to hear of Bandit's passing. Like you I gave my golden retriever some pretty special treats during his last 24 hours. He also scavenged a whole slice of pizza off the street....a few doors down from the vet. He looked so pleased with himself. They have a way of winding their paws around out hearts. A few months later I adopted Fèbe, a rescue from Mexico.
Bitter sweet to see the old place...but it doesn't look the same anymore without your stuff, garden, animals and you not there. Lots of memories there but the new place is home. ❤

There's rhubarb and then there's rhubarb ! My son ,who's a contractor ,recently dug up a rhubarb root ball in the UK , this was from a older property and was about 230lb. I planted a large section of this and its amazing ,proper old school rhubarb flavor . we reckon it's a hundred years old .

Rhubarb candy is a great treat. Cut stalk like celery sticks, macerated in sugar for about 30 minutes and then dehydrate! Yummy chewy sweet and sour treat! My kids devour it!

FYI: Cornstarch will dissolve much better and be smooth not lumpy if you put it in a little cool water first and make a slurry out of it, then add it to your hot mix❤

The day after you two experienced that first surprising overnight frost a week or so back, it snowed at Hatcher's Pass. Yesterday it snowed, for the first time in August for twenty years, at Lake Tahoe ski resort. Nature is telling us an early winter is on its way.
