Passenger cars - You live in a place with almost no passenger service, or you go to museums a lot. Or you're a suburban/commuter/NEC foamer.
Gallery cars - You're from Chicago.
Other commuter cars - You live in commuter territory.
Baggage cars - You think of these as freight cars but for people.
Coaches - You either used to or currently ride Amtrak a lot, or you wish you could ride to work in something more comfortable than a commuter coach.
Dining cars - You love food and curse Washington for underfunding Amtrak.
Sleeping cars - You either are rich, been on one once, or you spend a lot of time in them at museums.
Lounge/cafe cars - You think of them as a Starbucks on rails.
Observation cars - You love glamor.
Dome cars - You either live in the Rockies or want to visit the Rockies.
Mail/express cars - You want them back.
MoW/ribbon rail/ballast cars - You're just glad to see something different for once, or you love things even more unique than coilcars.
Autoracks - You're a car enthusiast and you long for the old days when you could see the cars inside.
Tank cars - You probably work in an industry that deals with them.
Flatcars - You like seeing them loaded, and military trains are your dream come true.
    TOFC/spine cars - You're a truck driver.
Schnabel cars/heavy-duty flatcars - *insert foaming here*
Specialist cars (steel mill cars, shop equipment, etc) - You have these on your model railroad or you work in the industry.
I don't have a single favorite type but I love seeing fallen flags. Around here we get Conrail coilcars, Southern hoppers, SP autoracks, Pan Am/Guilford boxcars, etc. And yes, I fit into many of the above categories.

Quite frankly I have to say boxcars are amazing because there is so much variety, so many brands companies, the timeless style of them, it is so cool, last week I saw a Panam boxcar that was pretty cool. A anything with Armored Vehicles. They pass through my town all the time, sometimes they're mounted on Well cars and other times on Flatcars. Just nothing but a mile of MRAP's, various kinds of Tanks and APC's, Humvee's, cargo trucks in all different shades of olive and desert colors. It always freaks everyone out and they start talking about FEMA camps and Martial Law lmao. These cars usually go up to a place called Honey Lake in extreme Northern California where alot of these vehicles go to die as scrap or be completely overhauled. There's stuff up there rotting in the high desert from the Vietnam war. It's always a based sight to behold.

Sice starting my job as a conductor I have gained a special hatred for gondolas and a disliking of intermodel wells

Unless those coal "hoppers" have hopper openings underneath, they are technically, gondolas.

Just like the Erie and Virginian triplexes are technically tank engines, as their "tender" is supported by the locomotives 3rd set of drivers and the trailing truck, and is an integral piece of the locomotive itself, rather than a separate thing

“Coal Hopper”, yet those are all gondolas…

Yes. Empty centerbeams. At low speed, being swapped out for a loaded car with that fresh lumber smell. Hand-to-hand railroading. Part 2 of this is gonna be good!
