When it comes to real cut off, here's the basics of how that works: Your firebox can only turn water into steam at a limited rate and the locomotive has some capacity to hold pressurized steam (steam chest). With every piston stroke that steam is pushing against the piston to make it move, controlled by a valve. After that the steam is released into the smokestack.
Since the pistons are linked directly to the wheels it means that when you double your speed, they move twice as fast, needing twice as much steam volume per minute. At some speed the pistons will use up steam faster than the firebox can create it, meaning that the loco will lose pressure.
To counteract this you can pull the reverser closer to the center, closing the piston valve earlier during the stroke. The loco doesn't need that much steam when it's already running and this helps keep the pressure up. You can still reach top speed at full reverser, but you won't be able to keep it.
Implementing it would require simultation of the steam chest's capacity, an input rate from the firebox, and an output to the pistons, all being different for each engine.

The incident at 7:00 makes me glad they improved the rerailing tool a while ago. Before I'd just always reload, now I still usually reload, but not every single time anymore.

Shay used to be 7mph top speed and is now down to 5 unless you pull the reverser back. Unfunnily enough the Climax is now pretty close to the Shay's old top speed with 9mph thanks to the speed nerf from the cut off sim. Could still bring it to 11, but who's running geared locos to then sacrifice tractive effort for top speed?

I sadly can't recommend the wheat farm chain. The only thing that pays well there is the cattle (90$/cow), most other items are 5$ each, apart from grain (10$/item) and meat (20$/item). Although that doesn't feel worth it give that you don't get many items per cow and the processing rate of the meat packing plant is abysmal.
Also water unloading is annoying thanks to the tanks being round, making it harder to tell if you're lined up. Though loading can be fun if you place 3 wells with the right spacing. Just line up the spouts, open the valve, and load 3 cars at a time.

I haven't put too much time into the new maps. They seem to be problematic to put it simply. I have set up the first map completely. Sometimes, when I just want to spend a mindless hour or two, I'll log in.
