The sherry is a nice touch! I was hoping that you were going to add something like this to counteract all of that cream / milk. I’m putting this on my winter soup list to be cooked the night before and served reheated in a homemade bread bowl. Great job!!!
I make my COC the same way - sometimes I add a stalk of finely diced celery with the onions/butter, adding it does enhance the texture, it doesn't change the taste.
Because I rarely ever drink any kind of alcoholic beverages, when I come across a recipe that calls for sherry or wine, I NEVER know what to buy.🤔 I remember once being in the wine section of my local grocery store and trying to find bottles that said Sherry but couldn't find any. I love seafood though and I haven't ever even heard of cream of crab soup so I would love to try this. I grew up eating oyster stew made with some kind of milk, half n half or cream and have always loved it so this crab soup sounds delicious! Although I have never seen crab meat sold in containers like you showed. Only fresh crab or canned. I am going to look for those containers now and hopefully I can find them for this recipe.

And yes, I know that's fresh crab but where I live, I have only seen fresh WHOLE crabs where you have to get all the meat out of the crab shell yourself. I have never seen it like she had where the crab meat is already removed from the shell.
Next time you are in the grocery store you could ask for the grocery manager. He/she should be able to help you find sherry that is not cooking sherry. You heard her correctly! Sam absolutely said don't use cooking sherry. It is way too sweet. Jumbo lump crab is quite costly and for a good reason. The meat is hand picked and picking crabs is time consuming for most people except for the pros in the packing plant. Blue crab is for sure the sweetest if you can find it. I'm going to my local Sam's club and check the price if they have it. I expect the size tub she had will be over $25.

In fact, I have met many people in my life that have lived in this area their whole life like I have that haven't ever even heard of blue crab. But Dungeness crab is available here and it is very good, too. I just hope I can find it in a tub like she showed as I am too lazy to try to get all that meat out of the crab shell myself and it would probably mean having to buy several whole crabs to get that amount too. Dungeness crab is very expensive as well, even just the whole crab.

Just made this with leftover crabs from yesterday. Maybe my onion was too big , onion flavor is strong. Didn’t ruin it but prefer less onion. Thanks for the video
I am not familiar with restaurants in the Virginia area. I recommend the liquor for best flavor here. It can be left out but it will definitely change the flavor of the soup.

Cooking sherry is not in the liquor section. It’s by like the balsamic vinegar in the grocery store. And fresh crab meat is what she is using.

I am not familiar with restaurants in the Virginia area. I recommend the liquor for best flavor here. It can be left out but it will definitely change the flavor of the soup.

You can use an even blend of milk and heavy cream for the half and half (it’s just half milk half cream)
