Try making your roux over a cooler heat (medium is ideal) because emulsifications break in extreme temperature conditions, then if you have left over soup let it cool down for a long time before going into the fridge to ensure it’s not hot going into a cold environment. Hope that helps!

Claw meat?!? Are you kidding me? Real Maryland cream of crab should have a lump/backfin mix.
We find the claw to be sweeter. You can add lump if you like. Just remember a traditional MD crab soup has claw not lump. It’s all in preference.
