@@morgangentle1515 I do not cut the backbone out of leg quarters I do save the backbone and breastbone when I cut halves. Not sure what you mean safer for kids. I have never seen or heard of anyone having a problem eating leg quarters. Thanks for the comment.
Well Morgan I was answering yesterday without knowing exactly which video this was. I was at my granddaughters 3rd birhday party. Well this morning I watched the video to see exactly what you were talking about. This is the interesting thing I noticed about your comment that I did not cut out the backbone. Well looking at those birds there is not backbone on them. You can see the top of the thigh bone so the backbones were removed at the packing house. lol So your insults dont hold water. I am not real sure why you started in on that unless you did not watch the video or you just wanted to start correcting. No I do not cut the backbone off of leg quarters. I did ask, what is the danger of kids eating chickens with a backnoce on them. I tried to be respectful and take your comment and answer back respectfully. Then this morning I had acouple of more comments that seem to be more of an attack then of constructive criticism. Like I said on the video, I am always looking to learn and I learn all them time. I am indeed sorry that you did not like the way I prepared the leg quarters, but there was no backbone to remove. Have a great day.Chef Johnny

Run the pit a little hotter or do a little seat at the end to render fat from the skin.
