This is basically the way I've been making granola. Getting the egg whites nice and foamy is key. Maple flavoring is also a nice addition. Funny thing is I've never thought of pressing into a mold...great idea, thanks.

I bought the Keto coconut clusters, ( then read the ingredients 🤦♀️) well anyway my husband enjoyed them. I will definitely try this recipe, especially since I have everything. I may make some into a bit larger granola clumps for cereal with the cinnamon.

Made these a couple of days ago. Yummo! I knew my fam would love them so I doubled the recipe. I added in semi sweet keto choc chips, white choc keto chips, almond and vanilla extract, and cinnamon. I was leary of the cinnamon so kept it at 1 tspn for dbl recipe. That amount was perfect. I used Swerve with mostly successful results. I did whip the egg whites to soft peaks to make the liquid mixture thicker. Had no hint of burning. I spread the whole dbl batch out onto a large baking sheet and scored the wet mixture into small bars before putting in oven. This worked out perfectly as the final product broke roughly at the score lines. What I would do next time: bake the dble batch for longer, probably two hours to make it even more crispy; not include the white choc chips (I don't think they really added anything); try to incorporate some peanuts or peanut butter (possibly mix peanut butter powder into the egg mixture). This is a great recipe and can't wait to try the chewy variation. Thank you!

Thank you very much, Steve. That’s what most of us on Keto miss most: CRUNCH. Just today, I discussed how I’d made fathead dough cinnamon rolls but if you’re like me and after the first fresh one, it’s hard to get that “fluffy” texture back. I sliced them up and dehydrated them into a granola-like texture, which my husband promptly nicknamed, “Purina People Chow”. This granola looks utterly scrumptious. I’ll definitely be making these bites. I bet they’d been awesome when blended into churning homemade Keto ice cream. Happy Holidays!

Update: just made this and I really loved it. It didn’t taste as sweet as the Costco kind, but that’s a plus in my book. The original version from Costco has a level of sweetness that I find addictive. I always eat more than a serving. So I’m really glad Steve’s version is not like that. Having said that, my husband found it not sweet enough which is typical of his tastes. I melted some low carb/keto chocolate chips in the microwave wave and drizzled the chocolate over the top. I am really glad to have this recipe. It’s a keeper. Thanks, Steve.

If you want to make substitutions, go ahead. I can't tell you how it will turn out. I can only vouch for the version I made. I'm sick of the cooling effect of erythritol and the fact that it is brittle and crystalline in most candy and fat bomb applications. Sweeteners labeled "monk fruit" are generally 90% or more erythritol. Allulose might work, but it caramelizes in baking at a pretty low temperature, which is why I didn't use it here.
Been using allulose with butter get it to almost caramel state then adding pretty much the same nuts etc stirring it right in the pan then put it into tray freeze for 30 min cut into serve size. saves some time but seems to need to be kept in freezer until consumption, Sort of like the black sheep keto recipe on you tube.

I made this on the 19th of December. Only change was I had the Boca brown sugar, couldn't wait for my order of the original lol. It was a huge hit. My friend who is also Keto loved it too. Definitely making again, and again! Added chocolate chips to part of the batch and that was also perfect, used the Lily's dark. Thanks Steve, you knocked this out of the park!

Two bits of advice: 1) Store the granola in something air tight (container or ziploc bag) and use a desiccant packet to absorb moisture. These are the ones I use: amzn.to/3aS6woM 2) If you want to really make the bars and/or granola crunchy, put them in a dehydrator at 125F overnight.
Excellent video, right to the point, good editing & looks delicious! My stomach & brain are fighting each other in regard to nuts..there is some sort of disagreement which my digestive system seems to be winning...so sad..because I LOVE nuts.
I bought a bag of those clusters when they were on sale at Costco a few weeks ago as a holiday swap. They are nice to nibble on with a cup of tea, but they rev my carb engines and then I just want to keep eating. I’ll give this a try when I get some bocha sweet. Thx, Steve!
OMG Steve, you have a video for everything I want to make. I bought a bag of "keto" granola at Costco and while it was good the price was so high so I decided to make my own. I've done several batches and it gets scarfed up by my husband cuz he misses cereal. I just made a batch to use as a topping on my IP yogurt. And now I can make some into the granola bites!
I can hardly wait to try these! Just as a side note, "Lily's" brand has a Chocolate Caramel stevia-sweetened chip that is FABULOUS!! I use them in my keto chocolate fat bombs, and make the bombs only half the size called for---one small one at the end of a meal is sure to be plenty of fat to "round up" the day's intake---and the taste those chips add....marvelous!

I've been making these for awhile now using the All Day I Dream About Food recipe...pretty much the same recipe but I like that yours uses egg whites instead of a whole stick of butter: although yummy but I'm sure your calorie count is much lower so thank you for making these!
