    it was awesome when Eddie broke down the different noodle soup styles of several asian countries! i never really thought about the subtle differences and how they play their parts in the culture and flavor profiles of each country &dishes. In my native culture we use big ass pots so seeing Eddies big pots just takes me back to a place of memory. we have been changing a few staple dishes we always make.. like the corn soup we had this year they added green chili peppers to it and even my little sis who said she hasnt ever liked it ate a couple bowls because she really liked the new flavor profile! super cool to see how the dishes evolve over time and with adding new cooks who have their own styles. I love this podcast for giving me great inspiration for when i get together with my family and we arent bound to make our traditional stuff but can free ball and really play around in the kitchen for the fun of it! :) taking part in feeding our large family is one of the funest and most enjoyable part of being raised in a mindset of service and serving others, family or just friends the like.

    back in junior high in taiwan, every morning i buy a small bowl of beef noodle soup with spagetti as breakfast, not chinese noodles right next to the school.

    Shout out to my fam out in TW.
    I was already plant-based by the time I got to 🇹🇼 so I didn't get to try a true bowl of TW Beef Noodle Soup but the spices and the other ingredients could be use d for a plant based version. Legit crew up on this episode.
