Hello, The lemon juice in the batter is fine. You could also add lemon zest so it gives flavor but not the acidity. You can certainly freeze this cake but the strawberries will get soggy once defrosted. You can also make a strawberry syrup that you can wet the sponge cake with. I’ll send you the link. I've never made a sponge cake, but after watching your video I thought I might give it a try! It is now in the oven. I'm not sure how long I should leave it to cool before I remove it from the pan. I will go with my gut instinct on that. Awesome video, thank you, Alessandra!

Hello Mia, yes I always buy Unbleached flour. I actually prefer it. If you like a moister cake I suggest making the strawberry syrup recipe and wetting the sponge cake. That's not a shortcake, that's a cake with strawberries. Sponge cake, like she said. A short cake is more of a biscuit texture. Shortening bread.
