    Your recipes are so delicious Ryusei-San, my wife is Sansei, third generation from Japan, and when I cook your recipes for her, they remind her of the foods her grandmother cooked for them when she was a child here in Honolulu. Her favorite so far is your Agedashi Tofu and Taro. Thank you for sharing!

    No Shungiku here, think it's part of the Chrysanthemum family. We do have varieties of edible chrysanthemum plants. Love how you prepared the burdock. Hello from Oregon US.

    Happy anniversary Ryusei,you worked very hard.I am always fascinated whenever you introduce the different kind of herbal plants and vegetables that are available in Japan.Do you think the exotic and unique varieties are due to the locations of many prefectures in Japan? Thank you for the recipe,I appreciate it now that I know the base of sukiyaki soup,will try and make myself.

I'm so happy when I read your comments😊 Yes, but almost vegetbles came from other country (china, south america, north america, west asia and so on) long years ago. Actually, there are a little vegetble originated from Japan. However, japanese farmers have been making huge efforts to make new spieces and keep traditional vegetabls.

    Super nice, Ryusei. Top class. And congratulations to one year on TH-cam and many followers. You deserve it. I follow several channels, from India, France, Switzerland, Italy and Japan. Your channel is on top. I love the respect for traditions, methodes and seasons. But I also lived many years in Japan so... Sukiyaki is great. At home we usually cooked less elaborate hot pots and nabes, but sometimes went out to a sukiyaki place. We had one in the suburbs of Fukuoka, kind of in between a fine restaurant and a family restaurant. Their sukiyaki was superb and abundant and with fine meat. Not sure I could eat all that today. Shungiku grows here in Romania but I never find it at the market. Google does not even find a name for it in Romanian. A friend of mine, who is moving to his own house, and me will grow some and some other hard to find herbs as well. Plus some goya for chanpuru :-)) Seeds are easier to find for most if one searches. I do find both shitake and enoki mushrooms here. My Japanese gf and me call the latter aliens, we have aliens in most nabes :-)) The beef from Yamagata looks amazing. The final bowl with rice, beef, egg and sauce is perfect. Matsuya X 10. Arigato and have a good 2025!

    thanks again for the masterclass, what kind of spice do you use for the spicy (hot) flavor? as far as I know, Japanese food usually is not very spicy like Chinese food. kanpai!

      I used “shichimi”. It’s a Japanese traditional 7types of chili. Yes, you’re correct. We don’t use so often like chinese and korean. But, we use shichimi and ichimi! Thank you😁

    Hi Ryusei!
    I used to have sukiyaki at a local (and very traditional) japanese restaurant, run by an old lady...
    Extremely good, but instead of the sukiyaki sauce, they used some kind of dashi, along with soy sauce(this one you added to the pot yourself).
    So, my question: are there many different ways of sukiyaky?

      That was nice! Yes, you’re right. The taste, way and ingredients are different from regions and households.
      So, if you go to the restaurant and eat sukiyaki, it different from my recipe. But, normally the taste of the sauce is sweet and soy sauce based.
