I think they switch recipes quite a bit considering there isn't a lot of automation going on - I mean it looks like really fancy (with all the sifting and coloring of the white chocolate and all o.o) homebaking for the most part, but on a very large scale and packaged at the end. The Fairytale Tree cake on this channel is the same bakery too. A bakery should be diverse in its products anyway so yea. Maybe it's not as monotone as it looks on first glance. But I could also be totally wrong xP

The machine would lead to more waste. Nothing is wasted when done by hand and with that technic
If you mean donut glaze machine, it would simply fill the whole hole on top of the cake in that cheese design
$7/hour minimum wage vs. a $250k machine. That's 4 years of profit, then you can buy the machine and kick the guys.
