Some TA runners like to take the wing off so they can see how close they are to the wall as they exit the corner or some battle players like to add a big wing so it sort of blocks a bit of the view out. I believe it's for changing the view quickly to get a glimpse of the rear view mirror above the screen, so they can have a chance to block their opponent.
Be careful if u r aggressive when slamming the wheel to get a yellow card for outrun battles to be 1st. Don't get caught by staff when not adhering to rules
