    The hospitality of the people in this entire region of the world can not be overstated. We drove to a random village to have a look at their way of life there. And of course, we were treated as kind as you could possibly imagine. They stopped what they were doing so that they could best take care of their unannounced random guests (us). We had a lovely time learning about their lifestyle as well as some of the difficulties they've faced in recent years, as with most people in Iraq. And of course, they treated us to tea and delicious snacks. We did seem to be a form of entertainment for them as well, at least, I'd like to think so 😊

    Hello Raman. A little information about that bread you talked about. In Kurdish we call it naan tiri. The way it’s made is the reason why it stays for long periods without rotting although I doubt if it will last in any household for long as it will all be devoured very quickly, is that the dough is spread very thinly on the Saaj dish that is used to bake it. Saaj is a very large convex metal dish that is placed on a source of heat. So the bread turns out very thin and very crispy. Once each one is cooked, they are piled on top of each other and usually the piles go really high. So you can either have it dry and crispy which is is yummy as well or spread a few drops of water on it which make it soft and pliable to consume with food. So because they become really dry and void of any hydration once baked is why they keep for long.only rehydrated when needed.
