    The are so many Jungly Laal Maas recipes out there, manny, many of the bare little or no resemblance to the real deal. I have made this recipe with the Sheep Mutton & with the Goat Mutton, & with Venison & with Kangaroo. All had bones in, this is very important to me for the right flavour. All were delicious. My friends and family, are often asking me to cook these recipes for them.
    I lived in Calcutta with my parents and brother for the first five years of my life. My parents have always cooked lots and lots of Indian food. In Bengal, we eat a lot of fish, spice & rice. Western Indian food is very different, but very lovely also.
    Cooking for people is one way I like to show my love for my friends and family.

      Ria Rio , yeah, kangaroo. Kangaroo is an extremely lean, dark red meat similar in taste and texture to venison, with a little of that pork meatyness. Also it it’s very, very low in cholesterol. Best of all, there’s really no such thing as “tender” ‘roo, so it does really well bing slow cooked over many hours.
      I don’t know if you eat meat, or if kangaroo is available where you live, if you do, and if it is, you should definitely try it.
      It does sound a bit funny.... kangaroo Curry.... maybe it will hop too the top of your favourites list.... sorry I just couldn’t help myself.

      If you include tomato purée and substitute Mathania chilli with Kashmiri Lal mirch you’ll get something very similar to rogan josh. Which too is a nice dish.

      The Smell of Mathania Chilli is the Soul of the Laal Maas.
      Laal Maas without mathania chilli is a body without Heart.

      does the mathania chilli have any other qualities other than just colour ? probably some distinct flavours? oungency ? I donth have access to Mathania chili..if its not as diffeerent from kashmiri chili..will use that

      Kashmiri Lal Mirch is different than Mathania chilli. Mathania has a distinct flavour and is the signature ingredient of Lal Maas, so I wouldn’t suggest using a substitute. Kashmiri Mirch is great for Rogan Josh, but not this dish. I bought a packet of Mathania on Amazon.

    Lovely recipe.We only get Kashmiri chillies here, so is 5 enough? How much water do you add for 500g meat and is the pressure cooker set to low for 4 whistles at end? thank you

      1. 5 Kashmiri Chillies should be enough but if the color isn't sufficient, you can add 1 more.
      2. Add 1 cup-measure of water to 500 gms mutton as shown in the video.
      3. The pressure cooker should be on high heat till the 1st whistle and then reduce it to low heat for 3 more whistles ( total time for the 4 whistles would be around 15 mins). Switch off heat after this and allow the cooker to release pressure on it's own.

      Yes you can double everything except maybe the mathania red chillies. Double or reduce as per your heat level. 👍🏻😊

    Can I use Amchoor powder (dry mango) as a substitute for the Kachri powder? Kachri powder is not easy to access here in the UK

    Please suggest how to prevent curds from splitting when adding in the gravy. I have tried everything from using dahi at room temperature, whisking it thoroughly to, to adding a pinch of sugar to the curd and lowering the heat and mixing continuously. Please suggest what else needs to be done

      1. Whisk the room temperature curd and keep
      2. Switch off heat/flame completely.
      3. Add the whisked curd slowly and mix it
      4. Switch on gas and keep flame on low.
      5. Keep stirring on low till oil separates…should take around 3 mins.
      If you follow these steps it won’t curdle. I follow these steps . Good luck for next time Shilpa 🥰👍🏻

    I heard laal mass can be only in mathania mirch not any other mirch because its not too spicy like other mirch! But where do i find mathania mirch in gulf especially kuwait

      Yes, it’s made with Mathania chillies .. however if you can’t find those chillies you can try with Kashmiri chillies 😊
