Her career is interesting; she works here as a bounty hunter, Mando called her an elite mercenary, and when she meets Boba she is an assassin. Note the increasing focus on killing people...

I loved Fennec Shand's character design and kudos to Ming-Na Wen for her voice acting. Kevin Kiner's score for Cornered is a treat to listen too. Echo is used for some fun comic relief. Cornered is one of those episodes that is well worth re-watching. The six legged pet animals Omega encounters are voorpaks like Buggles, the pet Tora Doza owns in the animated Star Wars Resistance series.
I love that you actually have the capabilities of remembering things. I watch a lot of reactions, and it always drives me crazy when people seem to completely forget characters and moments from Clone Wars. But yeah, I think the person you were thinking of is named Chuchi.
This is the main problem with retroactively introducing already established characters: they were afraid to make Fennec look weak so as to not piss off the audience already familiar with her (nevermind the political/ideological reasons). Sorry to say but, animated logic or not, her knocking out Wrecker, a guy 4 times her weight in heavy battle armor, with a single move is just not happening. Do remember Newton's 2nd law: the higher the mass, the more energy you need to alter its direction. Yet the 'fans' laugh at stormtroopers being knocked out by Zeb in Rebels.
Gotta love Fennec in this episode. Seems like someone has ordered Bounty Hunters to track down The Bad Batch and kidnap Omega, which means not all fights will be against faceless clones. Great reaction! Looking forward to the next episode of this, and the next episode of Ahsoka!
