Japanese curry , also known as Curry Rice / Kare Raisu is an ultimate comfort dish, so flavourful melt in the mouth meaty goodness.
Nowadays we can easily find many varieties of instant Japanese curry roux in the Asian aisle at the supermarkets. But if you want to make it from scratch, it is so easy to put together a homemade curry roux.
In this video, I am going to show you my way of cooking Japanese Curry, with as always, a secret ingredient :) I am often asked why my dishes have a certain depth of flavour but couldn't pinpoint what ingredient exactly went into! Well, I use a cooking technique called "Kakushiaji" which means “hidden taste,”. This cooking technique involves adding a very small quantity of a contrasting ingredient to make subtle improvements to the final taste of the dish. The idea is to add just enough of the particular ingredient to make an ever so subtle change, and not too much to be able to tell you’ve added that ingredient :) In the case of this curry recipe, this might be coffee or chocolate, or fruit.
