I run an even heat myself. It’s a great oven. The tap controller makes it real simple to program. Definitely a game changer. Glad to see you were able to get one. It will change how you do things. They are a great company too, when mine showed up there was an issue with the control board, the oven still worked but the screen flashed every few seconds. I called and 2 days later I had a brand new board at my door. No charge. Great folks and a great oven. You did good. And them knives looked great!!
