I never use VLC for video transcoding (because it doesn't give you any option to control the output quality, and it can write header information, so files aren't finished properly).
But I do use it to check the codec types inside MKV and MP4 files. You do that by pressing *Ctrl+J* (Windows). In MacOS the shortcut is different, but you can just look for the 'Codec settings' view.
Stream 0 Codec will show the video type, while Stream 1 Codec reveals the audio type. These formats are what really matters, if you need to solve a playback problem.
In most cases you can simply remux (copy) the video and audio tracks inside the MKV to MP4 without converting anything. That will save you both time and quality compared to what you see here. VLC also allows this. The "Keep original track" setting that you see in this video at 1:16 should simply be set for both the Video and the Audio codec settings.
Bu in general, I recommend free reliable programs like Shutter Encoder, Xmedia Recode, AVIdemux or FFmpeg instead of VLC.

Though the mkv file format is open to all; you might encounter systems that do not play or support the mkv extension or container format. In this situations, it is necessary to convert mkv to another system-compatible file format, such as the mp4 file format. It is actually effortless to convert mkv to mp4 using a video converting software like DumboFab Video Converter.
