The growth of Gundam through various games and sub-stories is quite fascinating. I'm particularly fond of the Madrock's design. As a game adversary, its visage with a villain-like face is indeed striking!
The 7th Gundam appeared in the video game and manga Battlefield Record 0081 and by the end of it, its full armor version ressembles a Mobile Armor. It might've become the inspiration for the GPO3's Mobile Armor component. Also, there are lots of Full Armor variants according to MSV variants. 2 were deployed in Africa, and 2 were deployed in space. Their canonicity is questionable though, but it would be interesting if you cover them next time.
I am a buge fan of the mudrock/madrock. Still find it funny that bandai had that panel they said the mudrock wasnt cannon. Then 5 minutes later announced the p bandai kit. Though as far as rx78-2 gundams go, the roll out version is probably my favorite of the rx78-2 variants.

My favorite main variant from the RX-78 line is the RX-78-02. It feels like a tankier version of the RX-78-2 and has guns in its chest. Also; as controversial as the parade color scheme is for both versions of Amuro's Gundam; I can't imagine Amuro's first Gundam in any other colors. Not to mention the parade color schemes makes Amuro's Gundam feel like a representation of hope. Heck; I feel the same way for Setsuna's Gundams (especially Quanta, which was designed for a hopeful future).
While the hammer still exists as a weapon in the One Year War (with Zeon even making their own attempt); the RX-78-2 was retconed from using any variant of it canonically.
Ironically, the RX-78-3 has a few different color schemes. The most well known depiction is of it primarily being a very militaristic white. With the surface of the shield and the core block being purple. Then there's the version you showed from GBO2. The most recent example; even if technically a different machine, is the G3 image colors version of the RX78F00 High Mobility Type. This is my preferred look for the G3; even when it doesn't have the additional thrusters, dual barrel beam gun, or the enhanced cooling piece on its chest. It looks intimidating and feels like a refinement of what Tomino always wanted.

In lore there is a RX-78-8 but only design plans existed, no actual base frame was made.

All of the RX-78 series are great. I would love to find the G04 and G05 units MGs.
