    I almost didn't get a Komodo Joe because the sheer number of factors at play was really daunting. But I bit the bullet, and I'm never turning back!       I know the feeling. got my joe last year. This Winter I got the drip tray, joetisserie, and soapstone. Didn't think I would get them so fast, but just watch for sales.

    Brilliant.
    After moving to an appartment 8 years ago I gave up my offset smoker, weber kettle and regular 6 burner, having now just bought a new house & going back to a backyard I'm also going back to barbequing and just bought myself a Kamado to celebrate after wanting one for as long as I can remember. I'm glad I found your channel as it's exactly the type of content I need to fill the gaps as I learn the ropes with the Kamado.

      Which one do you prefer? Do you like one over the other for different cooking styles (smoking, grilling etc.). I was considering a Traeger but the cost was a really huge drawback, then I found a great deal (at least I thought so) for a brand new KJ that I could not up--its in my garage as of yesterday! I'm excited! I know there are 3 versions of KJ's plus different packages, but I purchased the E16620 (least expensive package and sure of the version #) for $160.00!! $160 was hard to pass and I think was an Awesome deal.

    I never would have considered a Kamado Joe until I saw this video. I have always been intimidated by using kamado style grills in general but your videos have helped me gain the confidence of trying it out.

    Thank you , James ! I love the way you make it fun to use the Kamado grills and your tips . Looks like they will apply for most Kamado grills . I got a great deal on a Primo round grill with the rolling stand . I'm on a fixed income and couldn't afford a new Kamado Joe , Big Green Egg or even the Primo Kamado's . Today I seasoned the grill which helps clean it and it went from starting the coals to 250 degrees Fahrenheit to 500 degrees Fahrenheit in less than 5 minutes , I went to wash my hands and came back and it was over 700 degrees Fahrenheit and it went to over 800 degrees Fahrenheit ! I let it burn about an hour and a half and closed the top vent which was wide open and opened the Daisy wheel a little bit and I couldn't believe how hot it stayed . I closed the bottom vent and then closed the top to try and smother the coals . Tomorrow I will clean the burnt ashes out and I already seasoned the grate . Saturday I will see how good I paid attention to your video . Thanks again , Buddy ! Oh yeah , I saw you win the competition for making the best brisket . Congratulations ! Hats off to the cute little taster ! I subscribed to both of your TH-cam Channels . Always good fun and like you said ; You always learn something new . I'm trying to get my neighbors to do their own Grilling . All they want to do is eat mine . 😄👍 I'll have to teach them what little I know . Just to get started . I'm in a Trailer park and everyone is ; LAZY ! 😂 I can't stand bland food . Thanks for making the videos and taking so much time to make them . Would you have any Bloopers ? It shows everyone we all learn the are hard way . We're not perfect , just having fun learning . 😉

    as a new person to Kamada cooking I cant tell you how much I enjoyed this video....I found it by accident....I have really been searching for information and your videos have been more than information......they are terrific......I have learned and save many of them, bt this one really explained things from start to finish.....I, as well as others, thank you so much.....now I feel more confident is putting my first tomahawk steak or prime rib roast on knowing I have a better chance of getting to right,,,,,,I'm sure I will refer to this video when I do my first cook....thank you again for a professional video.....

    Your tip on more coals at the back due to natural fire direction is the sort of detail I'm here for! So my tip for you... re drip pan, find a catering store that stocks those cheap aluminium pizza pans. Better than foil, no waste, cheaper than steel, available in range of sizes.

    Just did my first cook today on my Big Joe I got this weekend! Holy cow! The ribs were out of this world. Heat retention was crazy good, and it held temp extremely well.

    Many thanks for this excellent video. I thought I knew how to use a Kamado. I now realise that you could write everything I knew on the back of a postage stamp with a large crayon and have plenty of room to spare! My Kamado Joe should arrive tomorrow and I now have a much better idea of how to best use it.

    This is exactly the type of content I was looking for, so thank you for putting all the work into doing this. As a novice BBQ'er, I am in the market for a better grille and I'm trying to decide if the KJ fits the needs. With a 45 minute '101' video, I'm feeling a bit discouraged that I need a "PhD in grilling" before I can turn out edible food. I understand BBQing is an art perfected over time, but I also cannot commit an extensive amount of time and money learning this grill. Am I going to be fighting with this thing out of box?

      its not as scary as you think, i covered 10 years of learnings and ~20 questions i get most often so its like a dictionary reference.... you don't need to have memorized every word in the english language to communicate, nor do you need to have memorized everything in these videos to start cooking great food. you've got this

      @@SmokingDadBBQ quick question. Have you ever burned off your gasket doing a clean burn? Heard a guy named Ron say that in fogo’s bge channel but not sure they gave the oven grade gasket new classics have now…

      @@mannyr8795 this used to happen on my eggs. The heat causes them to over or under bite which exposes the felt gasket to the fire and it kills it. I’ve done several clean burns on the same gasket. Can’t say it’s good for them but they survive lol

      @@mannyr8795 this is an area where the joe is light years ahead. The air hinge and gasket solve these issues. You can still damage it but it survives way more abuse for much longer

    your channel steered me to the KJ Team Red. I found a Brand new, unopened series 1 Big Joe on FB marketplace for $500. ..drove 4 hrs to pick up. First cook was chicken breast, next pork loin. I added; Meater+, kickash basket and the new style BJ3 Kontrol tower. Also coming is the Jotisserie and the I-kommand. So I am going back over the videos, now that I am actually cooking on my Big Joe. Just finished the middle section of a beef tenderloin...tasty! I've always been a charcoal guy..but just cooking on a square sheet metal grill. Thanks for all the instruction and encouragement to run my Joe. Propane or pellet was never even considered !

    Great video. I have had my 18 Joe for 2 plus years and learned a lot. Not sure if this is correct but I do a Spatchcocked chicken,. My grand daughter loves this. I use the slow roller with a piece of apple or cheery on the slow roller for a little smoke. I have never done much other than this.

    Hi James….after 45 years of Weber BBQing both charcoal and gas I decided after watching your brilliant video on the Jo Junior to go ahead and purchase, just wish it was the same price here in the UK as it is in Canada.
    The little joe arrived today and will be unpacked/assembled tomorrow with a view to first fire in the evening, very simple to start while I learn the basics of Kamodo Joe cooking, I will let you know how things go…..the Weber Genesis 300 will continue for cook outs of big gatherings.

    Good information. Just got a Big Joe and I was surprised how little information is included about how to use my $3000 kj. The manual basically says open the vents for more heat, close them for less. Maybe I accidentally threw out the cooking manual but I don't think so. Your channel helps alot.

    Thanks James! Been watching your channel for a while now, but finally got myself a classic 2 on crazy sale at HD. Just did my first cook last night. Wanted to try something simple, so went with burgers. Used your one finger bottom vent setting with fully open top vent. Figured the 400-450F range you mentioned you get would be perfect. Mine held exactly 500F, but I’m in Phoenix, so higher ambient temp. I GOT A SMOKE RING on my burger! Now I wish I would’ve sent you my BBQ problems questionnaire for you to come out here! Invitation is always out there if you want to get out of the Canadian cold!😂

    Thanks for the introduction. I was just gifted a Kamado Joe and 2 and I am looking forward to the new experience, my Weber Smoky mountain has been awesome, but Ive been meaning to try something new. I am just a little afraid that the KJ2 wont be big enough to handle a couple of racks of ribs and Ill end up loving it and pining for the bigger version of the newest KJ

    Even as a ceramic veteran, this 101 class is the most through and complete "class" you can find on the net for a ceramic cooker. So glad I found your channel while I was doing my research before buying my BGE, yes, even though you showed me that KJ is the better product, I still wanted my XL BGE. With Ceramic Grill Store and learning that KJ accessories fit the egg, I was sold on the green monster, and have loved every minute. You also confirmed that Dalstrong was not just a pretty face, but a great value as well as being a great product. You have saved me a ton of money in not buying stuff and then "upgrading" later.

    Your tips about feeling the dome and setting the vents correctly are super
    Important. I feel like a training session with these tips should be mandatory prior to owning any of the kamado joe models. Like marriage counseling before marriage :)

    Just did my 1st cook yesterday and cooked ribs. They came out great. I watched several of your getting started videos and I have got to say they are beyond 1st rate.
    I really like how you demonstrated your way of placing the deflectors, etc. in place. I would never have figured that out on my own.
    I have watched a lot of TH-cam videos and yours I believe are among the most professionally done videos that I have viewed. Thank you very much.

    Thank you so much. Your videos are so well made, thought through and structured. You are a great educator and also an intelligent tinkerer pushing the limits of Kamado grilling with an open minded scientific approach. This is truly refreshing in comparison to most other channels.

    Storing the Slo-Roller underneath the cart was a challenge for me as well. One day it slipped onto the shelf. Thought I was losing my mind until realizing why it worked.

    I really haven't barbecued a lot in my life. Never owned a BBQ either.
    But I have been watching your Joe videos and I kind of REALLY want a big Joe with ALL the accessories now!

    Wow, omg!!! Soo much info and very picky for cooking. Ahhh I’m just a simple man. Man I’m going to really have to get this down before I start messing up everything!!! Holy crap, I think I might just return this complicated thing. Temps here in texas not Canada get super hot at 100 degrees. Playing fire games with this thing are way too confusing n uncomfortable. Give me a hibachi grill and I’m good.

    So I took your advice and put my gummy smokeware chimney cap through the dishwasher. In this case, it didn't really do anything. Using some dawn, simple green and elbow grease I was able to get all the parts of it you see squeaky clean! There is still residue almost glued to it, but the most important part now is it's not sticky/gummy any longer. Thanks for the tip!

    I have recently returned to charcoal, wood BBQ's. I have spent the last week comparing and evaluating various options and manufacturers.
    This video was so good I am going to buy a Kamado Joe Classic 11.
