Tip : take all your kababs and put them in something you can cover. Light a charcoal on the stove top and put it in heat safe dish next to the kababs. Put few drops of oil over the charcoal to make the charcoal smoke and cover your kababs for the grilled smoky flavor.

Traditional Persian koobideh doesn’t actually have some of those ingredients. In Iran it is made with 50% ground beef(30% fat) and 50% ground lamb, grated onion that has had the water completely drained from it, egg to thicken it and a dash of baking soda, salt and saffron. Once cooked serve with grilled tomatoes, fresh basil & lots of sumac. That’s Persian style koobideh not to be confused with imposters 😉
Finally, as an irainian it's the first time I see some youtuber who is using saffron in the right way by making a saffron water with ice and grounded saffron instead of directly tossing it into their food!!😂

@@zahrashoaib1567 😅tbh I always just eyeball it. But in general if meat is the main dish in any middle eastern /central Asian dishes if you add lots of coriander to the meat. It makes it more delicious. So coriander (2-2.5tbsp) for bowl of meat. Also if the recipe calls for onion and carrots. Make sure to stir fry them together. Like broccoli cheddar soup let’s say. Don’t do it separate. Is just work better flavor wise.

they use baking soda in Iran NOT baking powder , in some restaurants , and egg is alsp used but it varies from province to province
