    sick job on the video! that's a giant. Be careful when releasing that jack tho. If you hold em by the gills it'll wreck their gills and they can't breathe as well anymore. A safer way to ensure they survive when released would be to support them by the belly.

    5:08 that jack will make a nice fire side soup with lots of green seasoning and hot peppers. im from trinidad bro and we remove the guts and use the whole fish. u guys waste a whole lot of meat. i do enjoy your videos. your fish are huge

    The sauce looks amazing... I have a couple of questions here:
    1) Do you put sea salt into the sauce to salty it up a little?
    2) Does this sauce work with fish like Tuna and or Salmon?
    Hope you can give me some inputs... I like to try it....
    your catch and cook videos are very informative. I tried most of your sauces and they came out good... you should open a restaurant and I think it will be an instant hit... :-)

      It would work with any fish tbh, the lemongrass paste was salty but you can salt to taste.

    the Guts could be Kept in a Strong Enclosed Metal Bucket for Future CHUMMing. & it's Skeleton & Head could be washed further before Boiling to create an Excellent Aromatic Seafood Broth/Stock.

    To anyone from Africa who was confused by the title, In the USA most Pompano are called Permit and and a Threadfin Trevally is called an African Pompano......

    Just tried your recipe. We live in Northern Michigan and had to use halibut. We really enjoyed it. LOVED the sauce! Can’t wait to make it for our fish loving friends. Headed to Marco Island, Florida in May and looking forward to trying it with our catch down there. We get a wide variety of inshore fish. Any suggestions what other fish would be good to use?

    New subscriber to your channel....but quickly becoming a fan! You guys seem pretty awesome and bro....you're pretty badass in the kitchen man!! I always wondered if African pompano was good to eat and that was all the proof I needed...looking forward to new content from you guys! Also, I appreciate the catch and cook segments ya'll do because people have to be educated on different species of fish....I never believed in the term "trash fish" because there's always a way to make a fish taste good, and it also depends on one's preference in my opinion. But just like you said bro, there are no such things as trash fish, only trash cooks!

    I really enjoy your videos and pushing your own frontiers of cuisine and challenging the idea of "trash fish." I noticed in this video that you said that African pompano are not in the pompano family. Actually both African pompano and the true pompanos are in the same family, Carangidae, which is the family of jacks.

    Put the skeleton on the grill. Cooks in short order and make the best fish salad ever. I always did it with King Salmon !! You will get a couple lbs of meat !! Try it !!

    Pro Tip: When using a tomato sauce for poached fish? Add a very light drizzle of grated Monterrey Jack, Mozzarella, or other mild white cheese on top of everything at the end then pop it under the broiler just long enough to melt the cheese.

    If you want some conservation advice from someone that has been working with fish for over forty years -- when handling a fish that you know you're not going to keep, don stick you hand inside the gill plates, around the gills. This is the most delicate part of the fish, even large fish, and you can damage the filaments by sticking your hands in there. If possible, leave the fish in the water when removing the hook, if not, use a net or tail them. If you gill them, even though they swim away apparently healthy, they may die later. And yes, I am a fisherman, I'm not some radical tree hugger. I just believe in conserving for the future.

    You know with that garlic press, you don’t have to peel the skin off the cloves. You can put them in the press and only the actual clove will press through and the skin stays in the press.

    Nice catch man, we call em kagami's here in hawaii(also in japan as the name originates from japan) or mirror ulua's(Ulua is what we call gian trevallys) but i know technically its not a trevally but they are a beautiful, wish i can hook up to one.

    I would also advise to use quality canned tomatoes vs store bought "fresh" tomatoes... simply because canned are picked close to when they are ripe and most store bought are harvested when they are green and offer little flavor to a dish.

    If you don't have fresh lemon grass you can use fresh lemon zests. It gives the same flavor substitute.

    Dude get rid of that trash soy sauce. Find a Asian store and get silver swan soy and for a spicy soy dip use soy, lime, and a couple small fresh chilli peppers chopped up let it sit for a bit. But do your self a huge favor and get rid of that Publix toilet water soy

    The part where you said wherein westerners only get the fillet and toss the remaining part is true! In our country, we use other parts except the not so edible guts. For example, we marinate the tuna jaw and grill it because it's the most flavorful part of tuna!

    Tip: Put the garlic in the zip bag and smash them. No flying pieces, no tears, same with Thai chili pepper.

    the Skin can be pan fried to Crispyness after removing the scales & Coating them with spices & herbs. the Bones with the Fillet can be choped into fish-steaks & cooked to release the flavour of the bones onto the flesh. there is a significant amount of of flesh & skin left in the carcass that you threw away.

    Victor- this sauce in my house is now known as Victor Sauce. It is unreal and the first time I made it my son said dont get rid of the rest of the sauce since we ate all of the fish. I put it in the refridgerator only to wake up and see him putting it on an omlet he made. He said it was one of the best and most flavorful sauces ever. Thanks a million, I hope to meet you one day!

    Just a suggestion.... either make a cookbook or put your recipes in the description or update your playlist for Catch Clean and Cook. I made this recipe before and LOVED it. Took a bit to re-find it but it will be worth it. I found the sauce goes well with all sorts of fish AND chicken! Thanks for always taking the time to teach the way you cook your fish.

    a lot of meat lost still attached to that head every fish other than tunas have cheek meat i usually cook the entire head thats the best meat on the fish. carry it to a soup kitchen at least so someone can enjoy it if you dont want it

    Aloha Viktor & Brook. I was a little surprised and happy to hear you have Goggle-eye Scad or what we call Akule (aah-koo-leh) as well as African Pompano which we call Kagami Ulua (kah-gah-mee Oo-loo-ah). Even nice to here you get the occasional Wahoo aka Ono (oh-no). The Goggle-Eyes we also eat by splitting them down the back whole butterflying then then salting and drying in the sun maybe a day or two until they are hald dried. We 'll broil them before serving usually with rice. Fried whole Goggle-Eyes also delicious. If you can get Cigar Minnows aka Opelu (oh-peh-loo) they are delicious as well as great bait. Amber Jack we call Kahala (kah-ha-lah) and the 20 pounders and under we keep but any bigger has allot of worms in the flesh and also has a higher risk of ciguatera toxins. I don't believe Florida waters have as much a problem with worms or ciguatera. Mahalo nui for another great video featuring one of my favorite fishes the Kagami Ulua. My personal best is 32 pounds, your's looks pretty darn close. Your platter of sashimi looks great as does your Thai inspired dish.
    PS. Here in Hawai'i we take center bone and head to make soup flavoring it with fresh ginger, garlic, and lemon grass with salt and pepper to taste and simmer for 30 minutes on medium-low heat. Afterwards you just strain out the all the solids leaving just the broth, then you add your fresh veggies of choice (potato, onion, carrots, celery) along with some cubed chunks of the fish and simmer until the veggies are soft. You can add chili peppers or have a bottle of hot sauce on the side. If we did have more bones and heads than needed after cleaning I would load up several crab traps to use heads for bait. We have HUGE Samoan (aka Mud) crabs in our streams, and nothing is sweeter.
    Viktor, try growing Lemon Grass in your yard, it grows like a weed in warmer climes.

      Ahnko Chee Outdoors 32 lb kagami is nutz! oahu? Almaco is very good eating. Kahalas are different but look similar. Aloha Haanapa!!!!
