They do make flat tappet cams just for that chop sound. Large amount of overlap so good duration but low lift. The choppy comes from the values being open at the same time and as the video shows, low rpm.
Because a roller can handle sharper ramping you can have a great as mentioned stage 3 and some 4 cams and balance a penny on it's side on the intake.
You missed the entire point of the video. He literally shows how people are simulating that sound with modern ECU tuning.

So I have a truck Norris nsr cam 212/22x .498 lift and it’s supposed to work with factory stall. Now my question is, how would I go about tuning it to work with the factory stall and what areas should I play with? Granted I do want to have the true cam sound, just need to know what I need to do to make it work with my converter

Bo I need to get my headers ordered and exhaust looking to buy the same as you bought but I wanted to ask if there was anything different u would have done if u did your setup again I was looking at buying a x pipe crossover but was up in the air about wether I should run a single 3 inch , dual 2.5 from x pipe back , or run dual 3 inch from x pipe back

Idle spark control OFF for me for sure. I personally find that exaggerated monotone wap wap wap on a lot of video's obnoxious. Much prefer the more musical sound of potato potato potato with all the various higher and lower picks and ticks like in my old carb cars.

wouldn't you get more chop and a more natural sound by increasing the amount the rpm can fluctuate during idle? That way the computer isn't constantly throwing and pulling spark
How do I lean out the fueling at idle so the chop is more crisp?
fix your maf tables. Idle is open loop with O2s. also should be logging short term and long term idle fuel trims. Maf first then adjust idle until long and short term fuel trims a within 5%
