I agree with most all of this. I also have a lot of outdoor cooking equipment.
I can tell you that a Pellet grill is also great at grilling. They also do high heat. Not the best at searing but everything else is fine.
Burgers & Dogs for example will burn or char up just as easy as gas or charcoal. Not as fast but definitely will char food just fine. A pellet grill is a great grill, not just a smoker.
PS Pellet grilling will out pace a stick burner for smoke flavor if you want it to. Its best of both gas, stick, grill, & smoker all in one.
The flat top or griddle is really the only one that is very different or unique.
Get a gas griddle not a griddle top for the pellet grill.
The pellet grill will work with a griddle top however temperature control on gas is very much faster response vs wood fire.

Buying a Blackstone 3 years ago was one of the best purchases I ever made! It's so much better and more versatile than a grill or smoker. Another great and informative video Johnny, thanks for sharing. In my opinion, a griddle is a necessity, everything else is an accessory. Overall in the USA, 70% of cooking is done on a griddle or flat top stove. 12% baked, broiled or roasted in an oven. 10% grilling, 5% for microwave. 2% smoker and 1% in a toaster. By the way, keep the vermin out of your griddle, grill, smoker, oven, and any other outdoor kitchen appliance by using either cinnamon or hot pepper. Thanks again from the back woods of North Michigan.

It is! But I made the mistake by using the griddle in the garage the other night (instead of the back deck) making smash burgers. It was at the very entrance/edge of garage, It was great until I found out the next day that everything within 10 feet of the griddle had a light coating of oil. That was lesson learned. I had some major failures lately as well. Like trying to make hashbrowns using thawed potatoes instead of putting them down frozen. Epic fail. I may have to go to the premade frozen patties like McDonald's or tator tots as you suggested! I also need more practice with pancakes. Also had a major fail with my collapsible/portable 22inch Blackstone. I collapsed it before removed the grease trap. Epic mess of grease and crap on the back deck. The bacon however was glorious. I have also found that good meat for the smash burgers does make a difference. 80/20 but a high quality meat just tastes better. Making freash ground beef with my Kitchen Aid attachment is in my future.
