Hi Tiffany! I used to do my kraut in a 5 gallon crock when my kids were still young. I was taught to put it up by the light of the moon and that’s how I’ve always done it.

Good morning/afternoon! When I do my kraut, I do 1 Tbsp salt per 1 lb shredded cabbage. You never know how much a head of cabbage weighs, so I shred then weigh, then add salt. The very first time I made sauerkraut was in 5 gallon food grade bucket, topped with cleaned outer leaves and weighed down with a plate and a brick in a ziplock baggie. I then learned (after the fact!) to put that bucket in a smaller muck bucket to catch the overflow of saline brine as I filled the bucket a little too much! That salt really does draw out the water within the cabbage and it made quite a mess! A learning experience I have never forgot! Lol. Absolutely nothing like fresh homemade sauerkraut!!! Yummmmmm.

Everyone has their own method of salt per veg. I DON'T math at all, lol!
For every 2 pounds of cabbage I use - 1 tablespoon and 1 teaspoon of salt. Two pounds of cabbage should fit into a quart canning jar.
I learned this all from a fermenting guru several years ago. It's always worked for me.

I have had sauerkraut smell and taste a bit off too. Not bad, just--- off, different, not real tasty. ,
I just mark it up as a bad head of cabbage.
