It works the same in minor keys. The scale degrees function in the same way and the diatonic chords/triads have the same functions (tonic, predominant, dominant). The only difference is that the TYPE/CHARACTER of the chords is different. For example, the Four chord in a minor key is a minor chord (in a major key it is a major four). The rest of the chords are i, ii dim, iii, iv, V, VI, vii dim.

Very good question! The three chord can function in TWO different ways. Depending on how it's used, the iii chord can be either a Tonic function OR a Dominant function chord. The iii is in the same spot as the vi or just a little closer to the I. you can go from the I to the iii to the vi and then to the IV. If you do I to vi to iii to IV it doesn't sound quite right. also you can just do I to iii to IV. hope this helps.
