    I had your Lisbon bifana for supper today (which was delicious, even though I had to replace the pork with turkey, because it was a last minute decision) now I know what I'ill have tomorrow :) Your channel just came in the right moment, I was going through a lack of inspiration in my cooking, although I have tons of cooking books...but watching you cooking is a real pleasure!     I might be only 2% Italian (grandpa had an italian last name from an ancestor who came here in the 1700) BUT I have decided that a good carbonara is as Italian as it gets! And its always a favorite to make! Dont know how healthy it is though, has been known as the "heart stopper" by some.

    Carbonara, along with Cacio e Pepe are my two favorites of the four pastas of Rome. I've haven't made them myself, but after watching you I think I'll give Carbonara a shot. Where I go in the Seattle area they use guanciale (cured pork cheeks) instead of panchetta and it just melts in your mouth.

    I'm a Carbonara lover. I've tried this dish when in Rome in so many places!
    I think your dish 'smells' amazing, but If you allow some quick adjustments for the classic carbonara:
    > Don't trow away pasta water; Instead, put a little bit in the egg prep to put the cream, creamish :D and also helps to not overcook the eggs when combining with bacon on the pan
    > Use pecorino (more saltier, and a bit more fatier), or a mix 50-50 pecorino & parmesan and if possible with finer "grinder"
    Nevertheless, your dish gave me some "bad" tentations!! :D

      I love it to. A lot! It’s actually one of my favorite pasta dishes.
      To answer you adjustments. The pasta water was something that I always used to use when making carbonara. It’s made it easier actually. Back then I also only used the egg yolk. But then the chef who taught me this recipe in Rome actually told me that it’s an amateur trick that wasn’t used traditionally. So that day I stopped and have never used it since.
      And yes if you look online a lot of recipes (depending on the region) asks for pecorino. I just find that cheese too salty when I also have bacon. But I don’t think it’s a bad idea to use it especially not 50/50 :) I mightily that

    I love it...Quick and easy! I only use the egg yolks and you must turn off the heat before adding them!

      Yes a lot of people would only use the yolks because they work better with heat and are good to give the dish the creamy touch. But I learned making it with the whole egg in Rome. Before that I would also only use the yolks 😅 it’s very important to turn of the heat before adding the egg yes. Otherwise it will go to firm. 😊

    Brilliant video and recipe but a couple of tips, firstly, never salt the pasta water until after it has boiled, salted water takes longer to boil than fresh water and salted water tends to boil over messing up the cooker whereas fresh water never does and secondly the boiling water should be salted to the same saltiness as seawater but a brilliant recipe none the less!

    seems very delicius :) I use Guanciale instead pancetta, and i use pecorino instead parmegiano. and i never use the olive oil, the Guanciale for itself release a nice juice :)

    Some tips: use pecorino cheese; don’t use olive oil to cook the bacon; don’t swapp pans and don’t wast the cooking water PF spagetti - this one is essencial to make the cream with the eggs and pecorino.

      I don’t like the pecorino cheese too much and I learned it with parmigan cheese. I think the pecorino is way to salty. :) The swapping pans I explained in the video.. not a part of the recipe just me not having a bigger pan. Olive oil is very good to make the bacon more crispy and also when you use cast iron pans it’s crucial to have enough fat to maintain the pans quality :) It’s so funny that you mention the pasta water. I always used to used it as well to thicken the sauce and stabilize the egg, but the chef who taught me this recipe in Rome said to me that it a amateur trick so I stopped.

    OK, before the Italians come here protesting, I might as well point out a few problems:
    * Roman carbonara is made with guanciale, not pancetta. It's fine to use bacon if that's all you have, but using "authentic" might irk some of the Italians. ;)
    * The cheese used is Pecorino Romano, not Parmigiano-Reggiano.
    * Please don't throw all the pasta water away. You need to add back of it to the sauce and stir so that it emulsifies with the eggs and forms a proper sauce that coats your pasta.

      What you are describing is exactly how I would make it when I worked at the restaurant La vecchia enoteca in Denmark. I worked there as a young girl. It was a great carbonara and it’s how all restaurants make it if they have a somewhat idea about real carbonaras.
      But when Joen and I lived in Italy for a couple of months we became good friends with the owner of In Roma. It’s the best local carbonara joint in town. And the chef was so kind to introduce me to the “real” way. He said use the whole egg which was very new to me. And what he also said was NEVER to use the pasta water as it is for “amateurs” I have never used the pasta water ever since 😅 which actually makes it more technical if you don’t wanna over or undercook the egg.
      The cheese you are right.. Although a lot of people would use 50/50.
      One of the beautiful things about a carbonara as opposed to many other Italian pasta dishes is that you have more freedom to select another type of ham and even pasta. That said I know that bacon isn’t the right thing to use 😩 but that’s all I could get.
      Remember Im not a chef like yourself. I don’t cook the educational recipes. I cook the food I learned in peoples home all over the world. 😊

    Id put more black pepper , while cooking and after as well, also completely turn off the oven when you add the egg, the residual temperature is enough.

    It looks good actually, but please dont call it classic lool. I pointed at least 4 mistakes from the real classic carbonara! You can call it carbonara, but please not classic.

      I'm sure that like in Portugal, in different regions you do "classics" differently. Italy is big with very different regions and weather, I'm sure they will do Carbonara differently

    Sorry to say but nothing worse than seing people that have no clue how to cook trying to give lessons to others you just teach bad havits and you dont use parmiagiano you use pecorino romano . U also dont heat your fry pan start with cold fry pan and dont add oil the fat will render. Also hou need pasta water more often than you dont. Allso thats original using whole eggs but modern version u use just egg yolk its richer. Also it has lots of fresh cracked pepper very important. Very simple dish but you really fu*cked it up . You can hire me for guidance and teach hou how to cook properley so you dont make basic cooking mistakes and you can learn proper cooking techniques being home cooked food and profesiknal cooked food big differance, wont charge you much iether haga
