I've done my fair amount of chickens in my kettle but i just got a WSM. Followed this video pretty much to a T after studying some others too, but I liked your methodology here for a bit crispier skin. Not using the water pan and raising the temps at the end really worked well. Also tried your wood under the charcoal thing. Thanks!

The ASMR is real in this video! Chicken looks great. I did the Brisket at the weekend but didnt turn out well, unfortunately in the UK normal shops dont do real briskets, it was the flat with no fat, I tried my best and was tasty but was quite dry. Need to find a good butchers who can do me a proper brisket. Though I do have a whole chicken I might give this a go on the Masterbuilt.
We will have to find you the right brisket. I also have had good luck cooking the pork butts and briskets on the second rack when smoking them on the masterbuilt. Best of luck on the chicken and thank you so much for the kind words. 👊

Thanks so much. I opened up all the vents on the bottom and the top but also left the lid open for a while so the fire could eat some oxygen. Without the water pan, that little thing gets pretty rip roaring. Cheers! 👊
I just scored a WSM 22 inch of FB market brand new for $225. Def going to have to try this. I noticed you don't have any mods done to your WSM. I have read lots of forums and there are many. What's your opinion on the mods?
That is an amazing deal on that 22" my friend. I'm not a big mods guy for the WSM yet.... I usually just go sans water pan for most of my smokes nowadays unless it's a longer smoke like brisket or pork butt. Cheers and happy smoking to you! 🔥
