For the interested: there is an Italian company MICHE, that offers cassettes for Shimano/SRAM/Campa in all variants (8 fold to 12 fold) and they also offer single cogs also in odd tooth sizes like 31. They also have cassettes for "youth" racing that may have e.g. 15 as smallest cog and ending with 25, for those you really want to have narrow jumps between the gears at the expense of not having a true speed gear. So for those wanting to perfect their cassette for their riding style and land profile, MICHE is worth a look. And for those wanting to maintain their custom cassettes, don't let them get that grindy and black as those in this video 🙂 (either clean the chain always before wet lubing or switch to waxing). Proper maintenance of your drivetrain easily doubles its lifetime.

While I know the answer to this one. A question for the show is: Can you discuss the difference in inner tube types butyl, Latex, TPU and even tubeless, Letting the average punter know the differences and what things to take note of if they get a puncture etc when it comes to repairs (eg TPU specific patch kits compared to standard butyl ones, road plugs etc).

I use a 46/30 front chainring with a sram 11-36 casette rear for climbing gearing. I can fit the 36 tooth casette onto my 105 road derailleur by adjusting the b screw all by myself. I don't adjust or adjust or add anything to the chain or hanger to do so. I think going 46/30 might save a little weight, too.
