Fish Cakes -Traditional Newfoundland - Bonita's Kitchen

    Today we will be making fish cakes, they are made with salted cod, fried onions, mashed potatoes and so much more. See recipe below!

    Recipe:
    1½ Cups salt cod 4 Tbsp. butter
    3 Tsp. olive oil 1 Small onion, chopped
    6 Medium potato 1 Lg. egg
    2 Tsp. savoury Pepper to taste
    ( sea salt optional )
    Water for boiling fish and potatoes and soaking fish over night.
    Method:
    Soak your salt codfish overnight, then drain off water. In medium boiler half full with
    water, then add your fish, in another medium boiler half full with water, ½ tsp sea salt
    ( optional) ½ medium onion, then add your potatoes.
    In a medium frying pan add 1 tsp butter, 1 tsp olive oil, melt then add ½ medium
    chopped onion fry until golden brown.
    When fish and potatoes are cooked drain off water. You will need a large bowl, add your
    potatoes, sauté onion, savoury, egg, pepper then mash together. Before adding your fish
    flake it apart with a fork make sure there are no bones in your fish. After you have all
    your fish flaked add to your bowl, continue mashing to mix all your ingredients together.
    In a small bowl add ½ cup of flour, then start scooping your mixture up with a ice cream
    scoop, to make equal helpings. Form each scoop of fish mixture into a flat patty then roll
    in your flour and put to the side on a plate until all your fish cakes have been made.
    Preheat a medium frying pan, add 1 tsp butter and 1 tsp olive oil, put about four fish
    cake in it and let fry until golden brown on each side, about 3 minutes or so for each side.
    This mixture makes 12 medium size fish cakes.
    Bonita’s Tips:
    If you only need to fry some of your fish cakes you can freeze the rest in freezer bags and
    date them for another time.
    Adding sea salt to the potato water helps equally season the potatoes before adding to the
    mixture.
    You can fry fat pork in little pieces with another medium chopped onion , this is called
    scrunchins. This can be put over the top of your fish cakes.

    I'm Japanese. My 25 year-friend from Newfoundland, who lives in Ontario nowaday told me his local dish this time, yes, it's a codfish cakes!! Thank you for sharing!! I will try to cook and to tell him what I think about!!

    I am from the Annapolis Valley in Nova Scotia, but live in Southern Arizona now. Sure do miss the sea food.
    I used unsalted cod filets to make your recipe and just used Thyme, Sage and Parsley (from the tins) to make this version.
    It is amazing - sitting here with a full tummy, both my wife and I are thrilled with how it turned out. It brought a bit of home back to me. My mom always made cod fish cakes with salted cod.

      Mark, I love listening to stories on how my recipes turns out for our viewers, I understand totally when you have to substitute some ingredients because they are not available in stores. But it's also nice to make the recipe your own, Check in the grocery store for summer savoury leaves you may be able to find that there I bought it in Florida before, it is almost the same as ours on the east coast.     My grandparents were from St. John's, and listening to you is like listening to my grandmother. What memories. Fish and brewis were always my favorite, with the fish sitting in a pan of cold water overnight on the back stairs. Still love to know what the bread pudding was she made with a boiled dinner. I think it was cooked in a cloth with the meat, but not sure. Wish I could recreate it.

    Great video! That is exactly how my grandmother from Cape Breton did hers. I make them out here in the prairies and people love them. I serve them with baked beans and mustard pickles. Yummy.

    Generations of my ancestors lived in Digby and Annapolis Royal in NS. Salt cod was a mainstay in their diet. I still serve it to my family, topped with tomato sauce, raw sweet onion combined with mayonnaise. and crisp bacon bits . I am hoping my children and their families will continue this traditional meal, using what our ancestors had available in their root cellars. Thanks, from upstate New York, for your recipe.

    Thanks Bonita. Is making them at the moment and the cod ... smells oh so good cooking! I love having leftover cakes in a sandwich the next day. So yummy. This is my favorite recipe my Mom made.       Yup there's always a tub of bacon fat in my fridge to add flavor when frying anything .... specialy fishcakes :)

      Hello Bonita, I am enjoying your recipes very much. I come from the North Sea coast and many of the Newfoundland recipes are very similar to the ones I grew up with. We ate fish cakes often. my mother liked to serve a dish of sour cream and dill mixed together to put on top of the fish cakes. I now live by Lake Ontario in New York but these recipes are still on my menu.

    I found NEWFOUNDLAND Savoury!!! Time to make a traditional turkey dinner with savoury stuffing and fish cakes!!! I tried a few times with regular savoury but it is NOT the same!

    Ok... I’ve gone and done it again tonight!
    I used savory this time and made 8 large patties. Had them with corn on the cob (a couple tablespoons of water in a gallon ziplock bag mostly closed - 50cm open and about 5 mins for small cobs - test it in your microwave) they come out perfect.
    Your cod cake recipe is so good. Used unsalted cod again - just a lot of salt 😃
    My Arizona wife loves them too!

    Bonita, thank you so much again!!! I've been trying a few different recipes for fish cakes and I've been having some 'falling apart' issues which I'm guessing is due to my mixture being too hot, the potatoes/fish being to coarse, and my recipe didn't have egg. I wasn't using savoury, but I definitely will now! It is so helpful to see the process rather than reading a recipe :)

    OMG! I forgot about NFLD Savory! My great aunt's use to bring it down, to Massachusetts. You would have thought they were bringing a cartload of gold! The family looked forward to this coming and the other NFLD products that we cannot get.

    Thanks for sharing your recipe! I've been making fishcakes since I left home but what I forgot to add to my recipe (which is the same as yours) is savory! Tonight I'm having fishcakes that will have savory. Along with fishcakes, I will be serving a ceaser salad and either homemade bread or dinner rolls .. but beans would be yummy. Mustard pickles sounds good too! I only wish I could have lots of cod in my freezer; along with partridge berries (I've settled with cranberries - that's as close as I can get to pb!)

      if serving the cakes with Scrunchins, would you cook them at the same time in the same pan or by themselves?

      Hi and I would cook them first in the frying pan with a tbsp of butter and then drain some of the fat off before you fry your fish cakes. That way the fish cakes got the flavour or the scrunchins on them, add more butter if you are frying more then one pan full. My friend puts her chopped fat pork in a bowl first and put them in the microwave for 2-3 minutes to release the fat then pour that with the fat pork into the frying pan to continue frying before draining, this stops the pork from releasing smoke. Whatever way you make them they will be lovely. Enjoy Bonita

    had fish cakes in St. John's at the Delta every breakfast, there for the Brier, not sure if they used your recipe but they were really good. I'll use this recipe. Would like to see more salt Cod recipes

I have a recipe on youtube for fish and Brewis made with salt cod, and the seafood chowder recipe I have there you can use salt cod or fresh cod.       Bonita's Kitchen we always had fish cakes baked beans and cabbage salad which was like coleslaw but only with cabbage grated finely. I just make coleslaw now.

      Hi Bill, This is another traditional meal, my dad god love him, loved this feed. He would make this one sometimes for his breakfast with a nice slice of sweet molasses raisin bread. He passed away 10 years ago on the 14th of Dec, I don't know where that time went. I think the sea bass would work lovely with this recipe, let me know if you make it.     We the Portuguese make salt cod almôndegas look like yours different shape dip fryer.to bad we not have salt cod fish from Newfoundland here in B.C .we find salt code from Norway . In Italy shops or Portuguese just in big cities. Love your recipes❤️

      I've made them with canned tuna, but not so good. I tried making bacalao once, salt fish, and soaked it, kept changing the water, and it was still inedibly salty. How much of the salt did you get out?

    Today my local Loblaws had bags of salt-cod pieces that had already been deboned and they also had whole salted cod fish. Which would you recommend or does it make a difference? I have always enjoyed fish cakes when I have visited NL and the other Atlantic Provinces but sadly here in ON our only option was Highliner frozen fish cakes and now even those are very hard to come by. I can't wait to make my own and your recipe sounds delicious\ Given the cod is the star of the show, I would really appreciate your advice as to whether the boned salted cod bits would be adequate.

      Yes for sure, just salt the water while it is boiling with about 1 teaspoonful and then add your cod just cook for a few minutes.
