Good questions Dominique! Yes the cod was already cooked and flaked. You can cook the fish any way you prefer, or even add it raw to the mixture. There is no need to add flour because the texture of the potato provides sufficient surface area for the egg to stick. Flour is not therefore necessary, just extra mess you don't need. See how lazy I am? :))
Thanks Patrick mate! You can make these out of canned fish and crab meat too, same recipe. Just replace the fish with the same amount of canned. Salmon, tuna, crab and even minced raw prawns. They are a doddle to make and super tasty 😋

This is the way the old school fish markets in Brooklyn, NY made them back in the day! I couldn’t wait till Fridays, which was the only day most of the fish markets were open. It was a Catholic neighborhood, so meat on Friday was forbidden by the church. Thank you for your wonderful recipe! 🙂
Look great! I think “fresh” bread crumbs like you used are so much better than those prepackaged bread crumbs any way. I’ve seen fish cakes made with Salt Cod, I think it’s traditional in the New England area. Do they use salt cod for these in England?
I think salt cod may have been used in the past, before the railways were able to carry fresh fish all over the UK, but I don't think it is used in the making of commercial brand fish cakes nowadays. Interestingly, salt fish is used to make Salt Fish Fritters in Jamaica, it is also used in their national dish Ackees and Salt Fish. Salt fish is used extensively all over the Caribbean, a legacy of the old seafaring days of sail. To me this is surprising given that the Caribbean has such a wonderful array of fresh sea fish, but then again not because salt fish is delicious! 😋
That depends on what you call a grill Jimmy. They can be grilled in the British sense of the word, on what Americans call a broiler, but in the USA a grill is a BBQ. Haven't had these for 25 years. Salmon Fish Cakes were always my favourite.
I sometimes make them with either canned or fresh cooked salmon, with dill and mustard, sometimes with tarragon Steven. Same method.

I pre-cooked the fish Craig. You can either microwave the fish for two minutes or poach it until it is cooked through.

On a British grill/American broiler, cook them under medium heat so they don't burn on the outside, and serve them piping hot.

There are only slight regional differences, but fish cakes are more or less generic across the British Isles these days.
