I love Coconut cake. It is my all time favorite cake. My Nana, Great Aunts, Aunts and Mom were scratch bakers from eastern North Carolina. I never saw them buy or use cake mix either. They made a "7 minute icing" in a double boiler and use fresh or frozen coconut. It was always the most desired cake choice among older family members. My mom always made two fresh Coconut cakes for Christmas to make sure we had plenty. RIP Mommy, Nana, Great Aunts and Aunts. I am now the oldest matriarch, who doesn't use cake mix or store bought frosting or icing either. Like you, they purchased pie dough/crust. They always made more than one pie and thought the store bought pie crust was as good as their scratch pie crust. That tip was past on to me; after I made a few scratch made pie crust with my mom. She wanted to make sure I could actually make a scratch pie crust. lol The women in my family taught me well. That's why I love your channel and can appreciate the "Old School Soul Food" recipes. 👍 This is one of my favorite cakes. Butter milk pound cake and caramel cake is the other. I recently discovered key lime cake.👍. My mother would either make pies or a cake every week. She also made tea cakes that was not a cake but cookies.😢😊. Both my parents worked. My mom was a LPN.she mostly did private duty My father could cook too, made the best hamburgers, and home made soups. He worked, raised hogs, planted a Garden every year. I look back now wonder how they did it all. Still had time to raise us, teach us right from wrong. To always give God thanks. We were never neglected,abused.or left alone. They didn't drink, curse, or went to might clubs. I thank God everyday for Loving parents, Grandparents and Great Grandparents.all whom I credit for being the person I am today. This is the video that brought me to your channel. I saw your teaser on Facebook. I was the one who said "you have my attention and my subscription" when you posted it up. I spent the weekend watching several of your videos. When I say several I mean like 15-20 of them. I watch a few a couple of times, once with my daughter. You have inspired me and my daughter. I have a smaller channel that shows hunting, fishing and some BBQing. I am thinking of posting up more of my family recipes as well. I want to try a couple of your recipes. That looks great chef!!! I love a lot of icing, too!!! When I was a kid, the only layer cakes that my mom made were chocolate and coconut. She was a poundcake lady.. She didn't use cream cheese icing on her coconut cake. She would ice the cake with 7-minute icing, where she had to use a double boiler. It was good, but messy, cleaning out the pan used to make the egg white frosting.
I have to say that the color of your cakes when you took them out of the oven are the best I've seen yet. The finished product...perfect. Looked so delish!

Beautiful cake! However, in order for it to be 'old school' one ought to put the elbow grease in and mix the batter by hand. That's a nice high tech mixer you're using there and it's very pretty... but machines can not add the love that comes from the human touch and that's what makes it 'soul food' in my opinion 😊♥ This cake is delicious with a white chocolate and fresh cream frosting too. If you haven't tried it you will be in for a treat.

Chef Jeffrey, one of these days days can you make an old school peanut butter cake? I remember having it in elementary school back in the early 70’s. I’ve never had that same flavor. Back then the cafeteria ladies made EVERYTHING from scratch. Scallop potatoes, real meatloaf. God I miss them days

Yes, my grandmother used marshmallows, but I forgot the ratio with milk and granulated sugar. I'll have to experiment to figure it out. It was her specialty.

The recipe for it shouldn’t be difficult to find at all if you’re able to use the internet. It’s the icing I grew up with on traditional coconut cake. I have the recipe for it. At this point though I think I rather have this buttercream with or without cream cheese vs the boiled icing.

Coconut cake I had for the first time in Oklahoma. Don’t get me wrong, I love coconut cream pies 💕 but I bought a coconut Cake at a silent auction at my daughters school. I think we paid $35 for that delicious cake. It was absolutely worth it!

I can’t stop watching you make this cake this is my favorite cake in the whole world I keep waffling between this and the pineapple coconut one and the hummingbird cake but this is my favorite cake hands-down I just can’t help myself I wish I was there right now to taste it but I don’t have to taste it I know how good it is without tasting it it’s perfect and I know your coconut poundcake is perfect two but this one… this one takes the cake as they say this one is a birthday cake and it’s not even made with cake flour and it’s not even a triple layer it doesn’t have to be look at how fat those layers are I’m surprised it doesn’t float away it’s so light wow I am just so impressed with this cake it’s so great thank you xoxoxo Big huge gigantic love from Colorado #HelpingOthersWithAPurpose

Coconut cake I had for the first time in Oklahoma. Don’t get me wrong, I love coconut cream pies 💕 but I bought a coconut Cake at a silent auction at my daughters school. I think we paid $35 for that delicious cake. It was absolutely worth it!
