Yes you can most definitely use red miso. What I learn is that each miso just adds a different level of flavor and if red miso is only thing available to you can just use that then.
@@drec9267 you definitely can! Miso itself is already packed full of flavor. I think white is probably the most "mild" but if that is all you have I think you can still make an amazing bowl of ramen! Adding more different miso types just gives more depth of flavor in the end product it seems.
@@wekencook I'll have to give it it try , thanks ! I'm thinking to soaking Kombu katsubushi and shiitake , then mix that with miso msg and ground ginger and garlic and see where that goes. Not sure of what ratios to use.

30g is a good start and worked for me but you'll have to be the judge and figure out if you like more or less salty according to your taste
