how much tare should i use for soup?
    30 g for 300ml of soup?

30g is a good start and worked for me but you'll have to be the judge and figure out if you like more or less salty according to your taste

Can you use all red miso

Yes you can most definitely use red miso. What I learn is that each miso just adds a different level of flavor and if red miso is only thing available to you can just use that then.

@@wekencook bro you're welcome. Btw in my country it's hard to find miso I only got white could I make a tare with just that or nah?

@@drec9267 you definitely can! Miso itself is already packed full of flavor. I think white is probably the most "mild" but if that is all you have I think you can still make an amazing bowl of ramen! Adding more different miso types just gives more depth of flavor in the end product it seems.

@@wekencook I'll have to give it it try , thanks ! I'm thinking to soaking Kombu katsubushi and shiitake , then mix that with miso msg and ground ginger and garlic and see where that goes. Not sure of what ratios to use.

@@drec9267 That seems like umami bomb! A lot of this is experimentation and using what you have so let me know how it turns out.
