You could dust a little Old Bay mixrd with crushed red pepper on the platter of food. In Maryland/Virginia steamed crabs are usually sold with extra seasoning on the side.
The lemongrass butter joke..I almost busted s gut. The fish sauce instead of salt is genius as it adds umame and seafood flavour. I am gonna keep that one in my back pocket! Its always soo clear in those small cold, backwater streams.

Next time you catch crawfish, drop them in a cooler full of clean water for a few hours. You’ll be amazed at home much “crud” they offload in clean water. I like to soak them for 2-3 hours, change the water and let them go again over night.
Leif I have a review video soon of a cheap Amazon collapsible crawfish trap. I don't want to spoil it but it would be great to take on your backpacking adventures. caught 130 in it on a drumstick LOL
