I love leftovers. They usually have more flavor. I am a single 78 year old disabled who lives alone. I make big pots of soup and stews and lasts me for days. I get to continue eating healthy without having to cook eveyday

The secret for me is to add different spices from other countries to change it up. I would call your today Italian. I add all the Indian spices sometimes.
I am still surprised when I meet people should need a recipe for anything they need to cook. Somethings do... cakes, some breads, but soup ? I'm with you... pile it in season it it n taste it. ❤

My cooking philosophy mirrors yours. I may try to "replicate" meals that work well if my kids express they love but, for the most part, my "regular" meals are unique. I tell my husband that when I serve him a meal that he loves, then to enjoy it in that moment and to bring presence and mindfulness to his meal.
As I was watching this I had a thought. I would probably put the immersion blender for a couple of seconds to make it more soupy but still chunky… yum!
I might have, but I don’t have an immersion blender, but one day! I usually have to ladle everything into our normal blender, blend it, dump it in a bowl, then go back and ladle out more from the pot… repeat… tedious haha 🤣

I love the way you cook this is exactly how I do things it's a Hodge podge I call it one pot wonders and God knows what's in them it's a magical mesh of yum yum I must say LOL going by taste smell and whatever rolls into the pot😂
I love seeing how people use their home grown food! I am so surprised you don't look for recipes to try. I get so overwhelmed with zucchini and squash that I have to try new ways of cooking it, or my family would not continue to enjoy them. I have made ratatouille, stuffed zuchinni boats, squash casserole, tennesee onion casserole, thai coconut squash curry, zucchini impossible pie with herbed stuffing crust, and squash pasta sauce this past month. I also freeze dried a ton of herbs, zucchini, onions, garlic, and made my own powders. I made green powder to throw into smoothies and also soups. It's amazing to see 20 freeze dried zucchini blend into powder that fills a quart size jar. I do cook with dairy products like cheese, butter, and cream however. Those help mix up flavors and textures and add a lot of variety to dishes.
I use what I have on hand, I find most recipes call for things I don’t have haha… so I like making up things surrounding items I have on hand. Right now I like seeing what I can make mostly with what I get out of the garden 😄 I make zucchini flour, but with a dehydrator. Herbs I just hang dry and the jar. Right now I’m big on dehydrating and blending tomatoes for tomato powder, it’s pretty good!
I planted seeds from the grocery store and they were so prolific. I am in zone 7a and planted them where my garlic had been. Kept the weeds done in that patch and now I can make pasta and fagioli soup. My Italian mother convinced me that I didn’t have to buy fancy seeds for this experiment. Than you Amber for making this video these beans are so easy to grow and nutritious.

What a nice soup , It's similar to minestrone , seasonal vegetables in chunks and borlotti , quite liquid. Here in Italy we don't add oregano , It's usually put on pizza , the use of oregano in other dishes is more of an American style 😊. The Italian tomatoes you used are called cuore di bue ( ox heart ). Borlotti are the most common beans in Italy. Yours look perfect ! Elena, Italy
