    that plastic ring you called a "top" is for making fruit roll ups, if you take that off ur kerhy will be done in 4 hours,i have the same dehydrator

    Just when you thought it was safe to go into the water it appears again,ME,anyway have put through my first lot of Biltong and Jerky,four recipes so I could test one against the other,yours won hands down,the others where,so so,to much of the Soy taste came through so will be looking to a more Spice and less Soy recipe next,both the Dehydrator and my home made box worked very well indeed,put them going in the loft in my work room,went to bed with the smell of spices and herbs wafting around the bedroom,Andsome.
    Will have to get some better recipes methinks and cut the Soy well back to let the other flavours come through better,still my Police Dog I am training is nuts for it so I can bribe him with it,works a treat,the best Dog Treat ever invented.Its Hissing down with rain at present here in Cornwall,still that`s the summer for you,Any tips or recipes would be great as I intend to get another batch going in the next week or so,All the Best from Cornwall,UK.

    I just drape mine over the oven rack for 3-5 hours at 150 degrees with the oven door open, I sort of feel those dehydrators are a bit useless, would you agree?
    And I can get a kilo in my toaster oven.
    I'm a bit scared to make your recipe though because last time it came out good, a kilo didn't last 2 days :S

    I don't know about anyone else - but I find that using my Nesco dehydrator cooks my beef at 165 degrees. Instead, I turn it to its lowest setting (90 degrees) and let it dehydrate longer. This makes a nice dry jerky that doesn't taste like it has been cooked.

    I love Beef Jerky and I eat a fair amount. Started to look at the labels on the store bought stuff, and thought back to when I used to make my own homemade. I have made both Beef, Elk, and Venison Jerky. I always loved this Thai version, but I plan on doing more flavors. Thanks for the comment and your continued support!

    What brand of fish sause do you like? I bought the Three Crabs brand after doing some research, however it's not like what they use at both of my favorite Vietnamese restaurants (for dipping sauce recipe-which they won't divulge lol). Which fish sauce do you use? I'm gonna make my first beef jerky this week. No dehydrator - so oven method will have to do. Or maybe I'll find a used dehydrator.

      Three Crab Brand fish sauce is best for most tupes of Asian Cooking.

    The jerky looks great. Just saying that the round plastic lid you placed upside down on top off the racks directly under the main lid is actually used for making fruit rollups. Its a solid plastic with no spacing so that the liquid doesn't run. There's a youtube vid on it somewhere.

      Absolutely not, unheard of in this recipe for Heavenly beef or Nua Sawan. As a person that spent a lot of time in Thailand, no one and I mean no one uses soy sauce in making this incredibly delicious beef jerky recipe. I don't know where you got your facts from, but unfortunately your way off base in your comment. Do some research and find out how real Thai beef jerky is made.     Try grinding your own pepper rather than using that stale pre-ground stuff. Completely different, more intense flavor (and no floor sweepings.)

      +smokeydoke100 I think you're absolutely correct, I used to roast and grind my own Thai peppers. Flavor is absolutely different, and it would've made some difference in this Thai heaven beef jerky recipe. Thanks for your suggestion.

And all I said was uhhhh, don't quite add up brother, I don't think you watched the video. Do you make a lot of videos?     awesome sounding recipe. Imma try with venison! You need a Hawaiian "drybox" We dry fish, deer meat, herbs, You need one to keep the flys off! Sun dry is THE WAY to make jerky. NO $$ For electric bill! Enjoy! Aloha

      Patricia Hammond I used to dry my jerky in the sun. I guess that's the way people than making it for centuries, never heard of a Hawaiian dry box need to look into it.     Oh this Jerky is top of the line stuff. All 3 wives Asian, and with my bad habits the next 3 too. Hay I make stuff without soy sauce Cuts got about 50 drinks video's on my channel, all top drawer, first class, top shelf, stuff and there not one that has soy in the mixture. The soy would water the alcohol down , and that would never be good.

    Try sealing the marinade in a bag and give it about 24 hours or more in the fridge.
    Also i will give you my favorite thai inspired recipe. Its obviously from my favorite dish Nam Tok. It have the lemon taste like your lemongrass, but without the chevy lemongrass bits.
    This goes for about 2kg of meat
    I squeeze the juice from about 6 limes,
    4 spoons of ground chili (i like i very spicy),
    a tablespoon of ground roasted sticky rice,
    Some fish sauce (to taste)
    Mix it good and add the meat. Leave it in a bag overnight in the fridge and then dehydrate until it is ready.
    In generel i prefer the wet marinades more then the dry rubs.
    Also soy sauce is good as a base ingredient.

      Michael Hansen I think your recipe sounds great for Thai beef jerky. Will different than mine, but it's interesting that you use ground roasted sticky rice. I've used dried rice in crying Tiger, it adds it unique taste, and I really like it the dish certainly wouldn't taste the same without it. I think you get you take me down, when you bring a bag around this this appear an hour two if you major Thai beef jerky right, it will. Thanks for your great information. On your your recipe.

      The Bald Chef I just saw your video with the crying tiger it looks delicious and is kind of a mix between yam and nam tok. Anyways try to make your own roasted sticky rice its super simple and yes the taste is amazing and kind of nutty.
      In generel i think you can make tonnes of great thai dish inspired jerky and i would love to see some videos if you get creative about it one day.

      I'm sorry, I lost it fish sauce, guess you're not familiar with Thai food, fish sauce is the quintessential ingredient in most of the recipes of Thailand. If you want to make incredibly good Thai beef jerky fish sauce is important, as ground beef is to making a hamburger. I'm sure there's other beef jerky recipes out there that you might find your liking. Anyone I've ever given this beef jerky to, was absolutely dipped, dazed, glazed, and amazed. It's that damn good, if you get a close mind, why are you looking like this? At any rate I'm sure you'll find your perfect beef jerky recipe out there, it certainly isn't here. Take care.

      Joe, I didn't think you were rude, just simply honest. I myself as young man, when I was overseas and first exposed to fish sauce, I was appalled by the taste and the smell. But if you want to cook Thai food, you got to be able to handle the fish sauce. The truth of the matter is, according to statistics the best beef jerky, is teriyaki, but like many things in life, it's an acquired taste. Certainly not for everyone, but I do appreciate you getting back to me with your reasoning.

    Hiya,greetings from Cornwall,just a thought about this if I followed this recipe as you have done then Marinade overnight BUT instead of Jerking I put it through my Biltong Box would the result be a pile of smelly stuff or Biltong Thai style,just a thought as the beef I have was cut thick and I have had to do the best I can with it so my slices are a bit thick and I cannot cut them again without ruining the meat so I thought why not hang it and Biltong it,am I mad or is it this Cornish Sun getting to me again,Great Vid and easy to follow Many Thanks.

      Though this Thai beef jerky recipe is spicy, you can leave out the hot peppers and still with taste amazing.     What instructions say you have to put them in the oven for 30 mins? Can't you just higher the temp on the dehydrator for 30 mins? Just wondering I love your videos!

      in Thailand. This recipe for Thai beef jerky is typically sun-dried and then fried. The dehydrator is quite different than actually cooking the beef. I've never tried this method, it makes sense in general, but I don't think in the hydrated reaction cooking anything you just removing the water from the meat. I found this recipe to be extremely tasty, but if you tried to get it right in your stove that great. I just never attempt to make beef jerky his way,but if you try it, I would love to hear the results.

      rct5r It would actually make more sense to give it heat in the oven first. Because you risk making a crust in the dehydrator, thus sealing a lot of fluid and bacteria in the meat.
      Anyways i never put it in the oven when usíng a dehydrator and as TBC states above it makes really good sense when sun drying.

      The Bald Chef By the way it is a good idea to put a thermometer in our dehydrator to see how much heat the 170 degree setting actually is (or what ever temps you like to use)
      Be sure to try to make some fruit leather rolls also - i know they are a hit in Thailand. There is unlimited combinations and you can basically just throw all the fruit you have in a blender and just boil the stuff for a while and dehydrate. Be sure to use some wax or teflon sheets in the dehydrator.

    your recipe calls for ingredient measurements for 1.5# of beef. How would you ramp that up for say 6# of beef?

Well it's real simple, just multiply all ingredients by 400% and you will get the figure that you need to create that amount of beef jerky.       I want you to understand clearly what I said in this video, I said 1 1/2 tablespoons of salt for 1 1/2 pounds of beef. You asked to make a batch that is 4 times as large. That would be 6 tablespoons of salt, not 8. 6 tablespoons for 6 pounds of beef. Remember this quintessential ingredient salt is what allows this Thai beef jerky not to go rancid for over a year. Salt is the ingredient that is a natural, time tested, preservative. Though this sounds like an excessive amount of salt, without this amount the results could be disastrous. Salmonella, and other bacteria could grow on the beef and make you very sick. If you are looking for a low-sodium beef jerky, look for artificial preservatives to accomplish what I've done here.The key is the marinade, not all the salt will be left after you removed the beef from the marinade. The salt content will be much less, yet with this Thai beef jerky we are also using fish sauce, which is high in sodium too.In conclusion many snacks such as beef jerky are naturally high in sodium, if this is a problem please stay clear of this recipe.       +Cleve Carpenter I think that the strength of the spices including the lemongrass, hot chili peppers, and fish sauce is quite overpowering, you have to temper this strength of the ingredients you working with.     Hey Chef - I found lemongrass, the Fish sauce I found comes in a bottle called "Thai fish sauce". I got that at a nearby store that sells Asian food/seasonings. But I cannot find the spicy Thai chilli powder... Can you let me know where to find that? On line, maybe? And maybe the maker or specific name of that spice?

    Instead of using salt, add some oyster sauce, soy sauce, and just a little bit of fish sauce. Most of the time I skip the fish sauce. I like to add honey sometimes instead of sugar. Or I add sugar and honey. Also add some white sesame seeds to it. I also add the other ingredients just like yours. After dehydrating it, I don't put it in the oven. I like to fry the jerky for 5-10 seconds. My family pronounce it as "Seen Savanh" which translates to Heavenly meat as well. We're from the Issan part of Thailand. I like it sweet, salty, and a bit spicy. It's a great snack. It takes a few tries to adjust the taste to just your liking.

    I bought a used Mr Coffee dehydrator and it doesnt have temperature adjustments and my jerky was done in about 8 hours. It tasted amazing. Does the temperature or time really matter ? Some of these youtube videos call for about 14 hours lol

My question to you is if it tasted amazing and you can make it in just 8 hours, I think you're doing great, so why change.I'm not familiar with that particular brand of dehydrator, but maybe it's just more effective than the others on the market. I just don't have enough facts to correctly answer this question.

      So true this Thai jerky goes fast. But when I was over Thailand is all done sun-dried. Living in suburbia. I guess it's just easier to go with a dehydrator, never got sick when I ate it Thai style. All in all I love Thai beef jerky. Thanks for your comment, insight !

      Terry never converted my authentic Thai Nua Kem recipe, known as Heavily Beef Jerky to a smoking process! Good question though I have no answer.

      Really, the beef does not hydrated? I don't remember ever seeing you at my house, let alone tasting this authentic heavenly beef recipe. Believe me my friend, the beef in this jerky recipe is fully hydrated. I've been making this for years, and I know what I'm doing. You should give it a try, and then you would find it use my methodology you would make magic. For every time I make a batch of this Thai heavenly beef recipe it magically disappears. I have never once, had anyone say oh this beef is not hydrated. But you've only got one out there I guess.

    That recipe looks great! Did you use a meat slicer? I love jerky. I bought an Excalibur dehydrator just for jerky when I got tired of messing with the open-door oven method. I usually do 5-6 lb batches using top round that I cut 1/8-3/16 in thickness. Thanks for sharing!

      I don't get it. I am a cook but I spent a year in Southeat asia and this Thai beef jurky is the bomb. I f you can do better on this recipe for Thai jerky show me your steal.

    are you sure this is authentic?
    Thais don't use chili powder often,preferring fresh.

      100% This is the authentic way to make Thai Heavily Beef Jerky. I don't know were you got your information that Thai cooking does not use ground chili powder. True many Thai recipe use prik kee noo peppers, but never in making jerky. I am sure of this because I have watched this recipe made many times in Thailand and was married to a Thai national for 19 years. Thanks for your question.
