Nitro is used as the gas for pushing the wine and cocktail because it doesn't dissolve into solution. If you use CO2 it would carbonate them, which is fine for the beer but, not what you want for the others unless you want to be pouring sparkling wine and bubbly Manhattans. Incidentally this is why stouts often use a CO2/Nitro mix. You dial up the pressure and it gets the beer lightly carbonated, and is then pushed through a restrictor plate on a stout tap which gives you that dense creamy foam and lowers the carbonation in the beer itself.

I’ll use my keezer for a nitro coffee cold brew keg and carbonated water, so two corny kegs and two tanks.
I plan on going with two 1/2 kegs, of of Founders KBS, and one of Bells Oberon!

Yes that would be possible! Depending on how far you need to run the lines, you might want to look at adding a short draw glycol pump.
Isn't wood a far better insulator than foam? That's just what I was taught back in the day.

The original seal on the lid was enough for us, but it would be a good idea to check for any air leaks.

How thick was the foam insulation on the inside of the collar?
