Good question. I usually make the first cut approx 1/4 inch larger than the final dimension of the blank. I take off approx 1/8" when squaring (from 2 sides). Once I have 2 good sides I cut it so that I have approx 2-3mm extra and take that off with the planer. The planer allows me to be very exact and keeps the sides parallel to each other.
Just saw your comment...I use a Freud 24 tooth Flat top grind blade, 1/8" kerf. Cuts really nicely. It's rated for boards as thick as 2.5", I think (all the writing is worn off but I've had it for 2-3 years. I just bought a Freud 18 tooth bit with a 5/32" kerf and a flat top grind. Supposed to work really well on slabs as thick as 3.5". Can't wait to try it.
Quick update, I prefer the finish cut from the 24 tooth. The 18 cut well but the sawdust is a longer abd looks a bit more like shavings. There are also more blade marks on each piece of work w the 18tooth blade
