You have to super off the shredder and just spin and jump right after you start losing height from the super. If you can coyote in other places than you should be able to super here. It's called a skyeboost. Basically you jump off a lilypad, hop on the water a couple times, then don't touch anything and when you run out of speed on the water, the game just launches you cause it thinks you're still on the lilypad you jumped off of.
