To bake them, place the donuts on a parchment paper lined baking sheet and bake in the center rack of a 375F (190C) preheated oven for 8-10 minutes. Hi! Honestly, it depends. Personally I like to use water in this specific recipe for a few reasons. 1) hot water won’t seize the butter like cold milk would so you get a smooth glaze. 2) you could use hot milk sure but the glaze would be richer and it’s already appropriately rich so it’s not needed and 3) I prefer a thinner, more clear glaze and milk would make it thicker and more white so you can’t see the chocolate donut through it.
In her recipe link, she said “Baking - Place donuts on a parchment paper lined baking sheet and bake in the center rack of a 375F (190C) preheated oven for 8-10 minutes.”
@Sugarspunrun In the Chocolate Sourdough Muffin you used hot water to "bloom" the cocoa powder. I liked how this worked for the flavor development of the muffin. In that recipe it looked like a 1:1 ratio of water to cocoa. This is not a technique you used here. Could you expand on why you didn't use that here? Could you expand on what that technique could look like in other recipes that use cocoa powder?
Hi! The muffins benefited from/needed the water, so I heated it and mixed with the cocoa to use the ingredients in the smartest way possible for best results. The donuts don’t need any added water and it would actually be detrimental to their texture to add it, so while I bloom the cocoa when I have an opportunity, there just isn’t a good one here. I hope that makes sense!
