    You have made a really good video and as a local I thank you for promoting Palermo and its delicious food. Just a bit of recommendation for your next video and please take it as just a constructive feedback. Based on what I have seen in this video I have the feeling that you are not familiar with the local ingredients and do not a very sophisticated taste which would enable you to tell the difference between gorgonzola and caciocavallo/parmesan or pecorino (I assume it to be pecorino since the taste mistakenly reminds you of gorgonzola and you found it strong). The former takes origin from the north of Italy, has a different taste and consistency and would never get along well with involtino of melanzane. Also, sfincione is different from the traditional italian pizza (Margherita) and usually includes caciocavallo and/or pecorino. That some kind of sauce that you mention is tomato sauce. It is named sfincione because it reminds the consistency of a sponge (in sicilian the translation for sponge is "sfincia"/"spincia") and this is why it is thicker than traditional italian pizza. And these were only the first 6 mins of the video. For the next time try to understand what you are eating, what kind of local ingredients you are trying and the history behind that dish. I find food a great way to explain the history, culture and traditions of a place so please make an effort to learn more to share with your viewers ;)

      @@igniohealingbringeroftruth9254 yes, and for a good reason! look at other countries and how much they lost over decades in terms of language, culture and food. Italy does a good job in preserving food, but sadly dialects are slowly getting less common. some regions like sardegna and trentino do a pretty good job in preserving dialects though

    I'm Sicilian, stigghiola and pani ca meusa are acquired taste, even in other parts of Sicily don't eat them. Some dishes you've to grow up to like it. I personally don't like many of the traditional dishes like that, so don't feel bad with yourself.

    Tranquilli...stigghiole, milza, frittola e quarume sono per palati forti, bisogna essere abituati! Figuratevi che io sono palermitana e non riesco a mangiarli lo stesso! Anche per me è stato un peccato che non abbiate assaggiato i dolci, Palermo è rinomata anche per la sua pasticceria, ma credo che dopo un'abbuffata come la vostra sarebbe stato impossibile mangiare qualcos'altro! Solo una precisazione: quello dentro gli involtini di melanzane non è gorgonzola, da noi non si usa, ma piuttosto è caciocavallo o pecorino!
    Comunque siete stati troppo divertenti con le vostre reazioni!😊👍🏻
    P.s. un consiglio: quando mangiate i pesciolini fritti, i più piccoli si mangiano interi, ma i più grandi cercate di togliere almeno la testa, probabilmente verrà via anche la lisca! E inoltre forse avreste bisogno di qualcuno che vi guidi e vi dia delle dritte (disponibilissima a farlo!)...😉😁

    Love your reactions to the food! Delicious local cuisine. (Tip... for the hard lemons.. take the tines of a fork and put it in the middle of the lemon and squeeze. The juice will come out... Can do it with pieces and halves etc. Just a fork in the middle of the lemon and squeeze!) Look forward to more delicious food and interesting journeys! Have fun! Enjoy!     The little boney fish you called anchovies might have been a fish called white bait in Australian which is deep fried , in Australia how anchovies come in jars submerged in olive oil .

    Never call it Arancino in Palermo! arancino is from Catania. In Palermo it's named ARANCINA! :-)

      @@TheGlobalExpats lol. I mean, I do understand the perception that foreigners have of italian cuisine, but in the end the rural/farming background is really strong, and if you want to take a deep dive into TRUE authentic italian cuisine you can find all kinds of extravaganza 😂
      Sanguinaccio, lampredotto, ossobuco, casu martzu, coda alla vaccinara, etc....
      In the end, when you have so little, you can't just throw away edible parts: so there are many dishes with liver, brain, stomach, tail, tongue .... 😅😅😅

    Matteo, you have to leave the spines off, if they are not crunchy. It’s very easy, because the fish is fried. The fried shrimps heads are delicious and crunchy.

    Arancini is a rice ball. A riceball consists of Rice, ground meat and peas (I am not a fan of peas but, I can deal with that).

    veals inner parts have an “heavy and strong“ flavour ( i’m not a big fan either,no disrespect taste is taste)

    .My friend and I are going to Sicily in May and I’ve been following your journey and enjoying your video’s. QUESTION: what car rental company did you use and how was your experience? The more known companies like Hertz or Avis are so expensive! I found a couple companies like noleggiare and Italy car rent to be much cheaper but I’m not sure if they’re reliable? Help!!

      Thank you so much, R! 🤗 That’s so exciting, we hope you have an amazing trip 😍🇮🇹 As far as rental cars go, we’ve rented from Avis 2 times (once from the Palermo airport and once from Catania airport) for €370 a week including insurance, but that was in October. May is beginning of high season so the prices will most likely be high regardless, but several people we know have used Sicily by Car, Italy Car & Locauto, and said their experience was good / normal. So whoever has the better price should work just fine! We use booking.com and that’s where we find the best deals / comparisons. We hope that helps!

      Hey Mark, thank you very much! There is so much to see in Sicily that you're going to have to be very picky with your 4 days 😅 Personally, if you are flying into Palermo or Catania, then they both have the perfect blends of food and lots of walking, plus a few extra places to visit near both of them! Try and avoid any town that is a mission to get to and stay along the train lines with easy access in and out, for example, Palermo + Cefalu is a favourite pairing and easy to access 🙌🏽 We trust you guys are going to have an awesome trip 🥰
