OMG, you kill me every time with the deliciousness levels. I've learned to make something even vaguely Chinese to eat while I'm watching. I can't wait for the next street food video. When I eventually get to China, I think it will have to be in winter because I'm a sweaty-betty as it is and the spices take me to the next level. Thanks for another excellent adventure xx

Thank you so much for visiting our hometown, Blondie. For people away from home for many years, this makes us feel nostalgic and touching. You are 100% accurate, Guiyang food is definitely over-spicy even for many local people, but the feeling is "I have to torture myself because I don't want to miss this delicious food", lol.

Just been to Guiyang last month, from 遵义 I ate 乌江鱼 and in the city we went to 南门's 肠旺面. We had to stand beside the table watching other people eat, and when they leave we had to rush to sit down to catch a place to sit. That was very delicious, and as you said, I feel it IS a bit more spicy than us in Chongqing.

This is a place where elders sing, dance in the park during the day, the youngsters out eating, kids play at night. People are just living peacefully and enjoying their life. A scene you will never get if you are a CNN, BBC reader, or in this case, an ABC (Australian Broadcasting Co.) reader. Thank you, Amy, for being a great ambassador. Hope SBS could use your videos.

I always want to see food from my hometown in this channel. I was so glad you enjoyed them. One of the special ingredients in Suantangyu (酸汤鱼) is called Mujiangzi (木姜子). Kinda hard to describe what Mujiangzi tasts like. But it gives the dish some extra freshness. The dipping sauce is aslo Guizhou's special. The chilli is called Hulajiao (糊辣椒), which is made by bake red peppers near the fires. The dipping sauces are mostly soup-based in Guizhou, rater then oil-based in Sichuan. Guizhou's hot pods are generally less oily than Sichuan hot pods. Guizhou's hot pods are more about the base soup. Sichuan hot pods are more about the oil. Too bad I cannot go back to Guizhou at this time. Otherwise I would be happy to be your host. Maybe next time 😊

There are so many channels I've noticed who have a couple of millions of followers/subscribers, and they only regularly achieve something like 30K views for each video. At first we tried to avoid the spice, and people were so concerned that we wouldn't be healthy. After a while we really upped our spice game and enjoyed the wonderful flavour!

That sour spicy fish seems really appetizing. I used to give a go on Guiyang cuisine in NYC,but it’s totally different thing.

Mint is commonly used in the southwest China, especially Yunnan

Consider coming visit Yunnan someday if you like mint and Guizhou cuisine! As neighboring provinces, they share many similarities, but I personally found Yunnan to be even more unique than anywhere else in China!

When I used to go out for hotpot in Chongqing we would each have a crate of beer next to our chair. And by the end of the meal there were only empty bottles in that crate! LOL! And for those who have not eaten fish in China, it is not filleted (that is, the bones are not removed), so be careful.

    吃辣鍋的時候如果太辣的時候可以先把火關掉不要再加熱了,不然越煮越鹹也越辣。

Hello, as a Guizhouese, I really enjoy watching this video. But I have to correct you that Guizhou spicy is not “酸辣”(sour spicy). I think the uniqueness of Guizhou spicy is Guizhou dish uses different forms of chilly pepper, for example, powder, oil, and 糍粑辣椒. Also, the last one can only find in the Guizhou style 辣子鸡. Enjoy your trip :)

Hey Amy! Glad to see you traveling and exploring new flavors of China again!
I’ve been to Guizhou in mid-2020 and found that I’m more a fan of the 江团 fish (a kind of carp fish) than 黄辣丁 (a kind of catfish) cuz it has more meat and larger bones. I’m really bad at getting all the fish bones out of my way 😂
But talking about spicy food, when are you visiting Hunan 😉 That’s your dream destination since you were still back in Sydney. Also the province right next to Hunan, Jiangxi, is known to have some most spicy cuisine of the whole country 😉
