Derk is so natural in front of the camera and a wonderful addition to your videos. HOWEVER, when I saw you with Mengzai and how free and easy you were able to converse together in Chinese I can totally understand why you need to do your own thing once in awhile and that the best thing about your videos is when you converse naturally with the locals. You two looked like you had so much fun. Please feature her again! Also out of every kind of food you’ve featured, this looks THE MOST appetizing. Hope you go back and try more dishes.

I regret not eating at the Shaxian chain when I was in China so much now. Now that I'm overseas there's no way to get it. It's really good that you get to experience all these foods while you're in China. I can't help but think that maybe I took all the cheap, delicious foods for granted as a Chinese. Once you get out of China you realize how good the Chinese have it. Any decent Chinese food is going to cost you a fortune in the west.

As someone who was born and raised in Sanming city (三明市) till I was 10, and lived in Sydney ever since, it’s such a delight to see you make this video, Amy!
Hundun (馄炖) and peanut sauced banmian (拌面) down at the local stall used to be a staple part of my breakfast before starting school. It may sound a bit weird but we used to add some white vinegar to the banmian to add some extra flavour!
Nowadays it’s the norm to see so many dishes, but back then it was really mainly those two, with some odd appearances of taro dumplings (芋饺), stired rice noodles (拌粿条), and hundun in peanut sauce (拌馄炖).
Feeing very nostalgic now and thanks for the video!

nice channel and good understanding of chinese food. a couple comments: 1) i've had siguotang in xiamen many times at many different places, but have never had it with coconut milk. you may or may not prefer it with coconut milk, but having it with siguotang is neither typical nor traditional in xiamen. the way you have it here, with a clear mildly sweet sauce is the same as you would normally see it in xiamen, with or without crushed ice, 2) fujianese bianrou is traditionally made with a wrapping of pork mixed with a little flour and worked obsessively until it can be rolled to a very thin and smooth wrapper. many recipes you would see online call for a regular wonton wrapper and probably many places selling 'bianrou' would just use a regular wonton wrapper. if you want to know if it is traditional bianrou, ask how the wrapper is made, 3) shaxian delicacies is not a chain like mcdonalds or burger king, where you expect not only certain menu items, but also consistency whether it's in nanning or kansas city. i'm not sure what shaxian restaurant owners agree to when they pay for the right to use the trademark, but owners tend to regard themselves as independent and there would be a lot of variation between locations, much more so than you'd see with mcdonalds, burger king, kfc. etc.

Shaobin is one of my favourite food items, particular the meat version. Had it for a week, either for lunch, or dinner. Hope Amy does not encounter the protests, and lockdown problems on her travels. Godspeed.

I was internally shouting omg she needs to have bianrou and banmian together! Great cheap breakfast and it’s definitely a comfort food for us fujianese people.

Banmian i like it garlicky, with a lot of vinegar and a touch of soy sauce and spicy powder.

The place that I sweat the most is my nose. I can’t even keep my sunglasses on without it trying to slide off during the summer. 😅
