I am from Beijing but work in brisbane now. I just want to say Huda restaurant is not the spiciest and most authentic crayfish restaurant in Beijing. But I would like to recommend you a small but very distinctive hotpot at the bottom of the rattan pepper pot, and the location is also in Guijie. This restaurant is called Qimen hotpot (奇门涮肉).
I don't think Derks spice tolerance is better than yours. He's holding it in like a pro spice soldier he is. Squirming inside but faking it cool outside. But yeah he did well holding the pain from the burn.🤣🤣🤣🤣🤣

What is actually best for toning down spice after eating spicy food is sugar. How spiciness is rated on the Scoville scale is actually based on how much sugar water it takes to make a spicy pepper not taste spicy anymore. It’s so weird to me that milk continues to be touted as the best drink for spicy food. If you try it out and compare using milk vs drinking something sugary, you’ll be able to quickly tell which really helps the most. It’s science lol 🤓

The funny thing is the spiciest thing I ever had was in Australia. Back in unsw days, there was a Korean restaurant at the ANZAC parade and I always had lunch there. One day I ordered chicken curry and somehow the instinct made me tell the chief "as spicy as possible". Long story short, after drinking 2 whole bottles of water, I survived and left almost most of the meal. Also, that chief made fun of me for the rest of my uni every time I went there. I won't provoke the chief ever.

Use phone to order. There are almost no restaurants still have paper menu in China nowadays.
