Corie, I make green Chile and it is very similar. I use can green chiles, they are mild just a little heat. And I like 2 cans of beans and no corn, and a pack of chili seasoning , and a small can of tomatillos, and 4 oz cream cheese if you like it. I use the bone broth to make it .and chicken or pork and it is delicious too!
It's a pure blessing to be able to do everything you talked about. I'm disabled now with a very bad back, had a stroke and I can't do many of the daily tasks I loved. I miss cooking so so much. I love cornbread too. I made good cornbread like your mom. It's my favorite with soup and chili. Thankyou Corie. You're a beautiful sweet young lady. I keep instant mashed potato pearls around for thickening soups. I love soup but I have a bit of facial paralysis so soups can get messy! I usually just add a spoonful or two to my own bowl of soup. It's perfect for any soup with potatoes, cuz it doesn't change the flavor. It's a great addition when you are feeding little ones, too. I look forward to making this soup, I never would have thought to add cream cheese.
The soup looked great. But like many others, it blessed me by all that you said from the "I GET TO"...! I have talked so much before about me being guilty of taking things (big and small) for granted😢! And it seems like when it comes to my mind, I'm also reminded of how I often fail at the verse, "IN EVERYTHING GIVE THANKS"😢, which I think go hand in hand. I never have to look very far to see others that have a harder time at day to day life than I do. Sorry I was so long winded. God bless you and your entire family! That chili looks really good. I love using the Instant Pot for meals. I found the best scissors to use in the kitchen at Home Depot. They are Milwaukee Jobsite Straight Scissors & are so heavy duty that you can cut just about anything with them. I can't do without kitchen scissors. I'm going to use your technique on the way I talk about household duties. I always say "I have to cook supper, I have to do laundry, etc." Now I am saying "I get to cook supper, I get to do laundry, etc." Thanks for the better way of looking at daily chores. Hugs!

We love white chicken chili! 🙂 Here’s a tip you can try instead of cornstarch to thicken it and add flavor: try MASECA instant corn masa flour. I usually get a glass measuring cup and start with like a quarter cup masa, and add some liquid to make a thick paste. Then stir the paste into your pot of chili. SO GOOD! Sorry I don’t have exact ratios of masa to liquid, but you can start small and add more to get your desired thickness. I also use a packet of McCormick’s white chicken chili seasoning. We serve it with Fritos, a spoonful of sour cream, chopped green onions, and chopped avocado.
Good job Corie! I make mine nearly identical but now I use boneless thighs. I think it gives it more flavor. I also use frozen corn, not canned. My 2 year old grandson loves it too!
I tried your White Chicken Chili for our supper tonight. It was delicious! I did tweak it a bit because I didn’t have any peppers so I used a can of Rotel tomatoes. I also added 1/2 stick of butter and about 3/4 cups of half n half cream to thicken it up a bit. Since I love cream cheese I use the whole block! It was very tasty with a pan of cornbread. Thanks for sharing! We have plenty left over for tomorrow’s supper too!
I have actually canned a recipe similar to it. white chicken chili and I used green chilis in it. so easy when tired and just grab a jar and open it. your's look delicious. I'll have to try your recipe and add the cream cheese.

That’s a simple recipe. I love white chicken chili. I like to simmer soups to get it thicker and flavors all melded together. I’ve need had the cream cheese in it but I bet it does give it a wonderful flavor. Yes, we tend to forget it’s a blessing we do have food to cook and dishes to wash. I’ve eaten the soup the church serves to the street people in other countries so trust me we are truly blessed here. Our church had groups to go to two South American countries, India, and several European countries.

You are so right! I have always told people that I like housework and doing"chores". Now that I am old, my kids have their own families and I don't get to cook and clean like I used to. I personally think white corn goes better with beans than yellow corn in white chili aka chicken chili Also, a good way to help a sauce or soup thicken up is, of course, some corn starch and bring it up to a boil. Then, simmer down low for a few minutes.
@ 8:34 "I get to ... " do these things ... That's my perspective now after dealing with back problems and on top of that last fall I broke my right arm (I'm right handed). I realized how blessed I have been for being able to do these things and do them without pain. And besides the fact that, as you said, many people don;t have the financial resources to preapared a homemade meal and don;t have a shelter to do those things either. Gratitude gives you a different outlook in life and makes you content.
I have made a version of this, but it called for Cilantro. I don’t like it fresh, but thought it would be okay cooked. It wasn’t. 😂 Love your instant pot version. Great video! I’ll try this over the weekend.
Something I like to do is ladle out some of the broth and use it to mix the cream cheese, then put it in. It avoids the chunks of cream cheese not incorporating Also I use my twisty chopper to break up the chicken. Yours look wonderful!! Than you for sharing yours! Love you girl's! ❤

Looks like a great recipe. Yummy! Saw a vid last week where the chef said for corn starch to thicken correctly it must be added at a pretty high temp. At least simmering. If adding flour/water you must boil/cook it a few minutes otherwise you're just making and eating paste.
The white chicken chili recipe I heard about years ago and tried is a little different. I'd never heard of white chicken chili before that. Cook white beans(dried beans from scratch)with chicken breasts,a white onion chopped. Salt and white pepper,oregano,cumin. Can't remember if there's any other kind of spices,I'm not looking at my recipe,not able to look for it. I'd put a spoon of butter in it also. Cook until beans are tender,then shred the chicken and add back in. It smells and tastes like regular chili and is so good. Everything that goes in it is white,or light colored. But it's really good with cornbread. Speaking of potato soup in this video,a nurse at the hospital I worked at made cream of potato soup at work once,crock pot. it was so good! Cooked potatoes from scratch,added cream cheese,seems like a can of cream soup of something, some whole milk,not sure if evaporated milk,can't remember if she put onion or garlic in,maybe some other cheese. Oh it was so good, thick. And with cornbread! Sorry I can't give accurate for sure ingredients but just remembered it and how good it was!!
I really liked how you all talked about adding a recipe into your family meals rotation. I think a lot of times when someone is setting up housekeeping for the first time, they don't realize they don't have to constantly be creating brand new meals night after night after night all month long. Most of us have our favs and don't mind a version of them repeated during the month. Creating that customized to your family meal rotation is a really smart thing to do. Thanks for mentioning that.❤

Great recipe. I add seasoning cumin to this as well.
I put green chilies in mine- Add other seasonings. Really tasty..

You could use Poblano Chiles. Not much more heat than a bell pepper. But with good flavor.

Looks like a great recipe. Yummy! Saw a vid last week where the chef said for corn starch to thicken correctly it must be added at a pretty high temp. At least simmering. If adding flour/water you must boil/cook it a few minutes otherwise you're just making and eating paste.

The white chicken chili recipe I heard about years ago and tried is a little different. I'd never heard of white chicken chili before that. Cook white beans(dried beans from scratch)with chicken breasts,a white onion chopped. Salt and white pepper,oregano,cumin. Can't remember if there's any other kind of spices,I'm not looking at my recipe,not able to look for it. I'd put a spoon of butter in it also. Cook until beans are tender,then shred the chicken and add back in. It smells and tastes like regular chili and is so good. Everything that goes in it is white,or light colored. But it's really good with cornbread.
Speaking of potato soup in this video,a nurse at the hospital I worked at made cream of potato soup at work once,crock pot. it was so good! Cooked potatoes from scratch,added cream cheese,seems like a can of cream soup of something, some whole milk,not sure if evaporated milk,can't remember if she put onion or garlic in,maybe some other cheese. Oh it was so good, thick. And with cornbread! Sorry I can't give accurate for sure ingredients but just remembered it and how good it was!!
I really liked how you all talked about adding a recipe into your family meals rotation. I think a lot of times when someone is setting up housekeeping for the first time, they don't realize they don't have to constantly be creating brand new meals night after night after night all month long. Most of us have our favs and don't mind a version of them repeated during the month. Creating that customized to your family meal rotation is a really smart thing to do. Thanks for mentioning that.❤
