I'm actually a forager myself and I collect chicken of the woods also! I've never eaten them but I do collect them. I also collect hen of the woods, Morel mushrooms, lobster mushrooms, chanterelle mushrooms, oyster mushrooms, and pheasant back. I know a place with a ton of chicken of the woods and I definitely feel lucky! (You're chicken of the woods looked extremely good!)
One of the best days I had at my old job driving around to take samples from cranberry bogs was the day I spotted some chicken of the woods from my truck, not more than 15 feet into the woods. I whipped into reverse and pulled over, and ended up with 3 large bags full of the stuff. It was a lengthy process to scrub the dirt and bugs off as they were a bit older than I would have liked, but it was worth it for the week of omelettes, stir fries, and rice dishes I made with them. Now I never go on a hike or a walk in the woods without some large bags or something to take foraged goodies back in
The reason the mushrooms remained firm is that fungal cell walls are made from chitin, not cellulose (which plants use), and chitin doesn’t break down much with heat like cellulose does.
I live in the US, and at my mum's house, in Kentucky, we have a lot of dead trees, or really old trees. She lives on a mountain, so it isn't uncommon to come across different fungi. We were out hiking once, looking for wild blackberries and wood sorrel. We found, and I am not exaggerating this, nearly 30 pounds of chicken of the woods growing on different trees. We cut off the bits of wood they were growing on and brought them home to a pile of dead trees that she has piled up and now she has her own abundance of it. It really is a delicious specimen and is a very good meat substitute if you are sick and can't get out to the store, or when she was in lockdown. Its a very wonderful fungus to have around.

Chef John?
What a gorgeous specimen and amazing find! Well done.
I think the TH-cam algorithm is telling me to question my direction in life...
Found one a few days ago - made three meals. Sauted, as a burger pattie and as a chicken wings alternative. Absolutely delicious!
this man just did exactly what everyone's parents told them not to do as a kid
I found this for the first time today. I was very much surprised how chicken-like it is in texture.
Now I never go on a hike or a walk in the woods without some large bags or something to take foraged goodies back in
Man if there's a way to grow these artificially, I could see this being very useful.
You can grow them in your closet. Buy spores online.
@@TheRichie213 you can. Be careful of the spore you buy and grow some can get you 25yrs instantly lol

My son found one in the woods next to our house the other day! Can’t wait to try it tonight with dinner!
How did it go?
@@scanbbb they turned out awesome. We just lightly breaded and pan fried with butter 👌🏻
The reason the mushrooms remained firm is that fungal cell walls are made from chitin, not cellulose (which plants use), and chitin doesn’t break down much with heat like cellulose does.
It's so crazy to watch this guy's antics, living in a big city in the US.
Generally, one would only eat the edges because they get way too woody towards the tree.

Thanks...but how much of each ingredient?
@@davegoodwin1848 most of those spices are pretty common- or can easily be substituted. Your local qfc or Safeway probably sells spice packets with them for 3-5 dollars each
@@davegoodwin1848 depends on servings...the amount depends mainly on tomatoes and ginger garlic paste as it is the base for the gravy.....u can refer videos on TH-cam
Sounds delicious :)

I’ve been watching this channel for a little while, it threw me off how the first time I heard of the chicken of the woods was on reddit this morning & now all of a sudden there’s a year-old video of it from a channel I already know of
The slices are begging to be dipped in your signature batter and doritos coating
the pieces of CotW i had a few days.ago literally hat the _exact_ consistency of chicken tenders from the gilded arches. i bet it'd work amazing
Congratulations your first Chickenofthewoods!
Is the "patch" still yielding good specimens? Or have other foragers found and looted it?
I found lots of this today. But I'm too scared to try it! I knew what it was thanks to your fabulous channel! Fantastic experience

"It's more meaty than some of the meat substitutes"
why don't we use it as a meat substitute then? Is it impossible to cultivate?
It can be cultivated. There must be some constraint with volume or speed of production, I think
Quorn is a really good meat substitute that's really common now in stores.
But people still buy animal meat 🤷♂️
@@javalavadingdong doesn't matter what you hippies find in the woods, You cant beat a good burger.

"It's very similar in texture to chicken...you could do a pulled chicken sandwich and nobody would know the difference."
Uh, pretty sure the chicken would!

Chicken wouldn’t know shit. There’s barely any difference between the self awareness of a chicken and a fungus

From California and in California we don’t have woods but fields. I found some mushrooms there so I’ll be eating those and updating you on how they taste. I will be back.
